I’m a Kurdish chef and restaurateur who specializes in kebabs and grilled meat. What you may think of as late night fast food after an evening clubbing is in reality an ancient signature dish of my homeland with a history dating back to Central Asia and ancient Persia. Grilled meat in kebab-type preparation was depicted in Byzantine Greek icons and described in Homer’s Odyssey. This dish has some history! And I'll teach you about it, and show how to respect it - through preparation, grilling and serving. We will both prepare and eat an amazing meal together! What we’ll grill: The only true method for grilling authentic kebabs is over fire, so we’ll start with how to prepare and manage an open charcoal grill the natural way (no lighter fluid). These methods can be replicated, but best to learn the process with someone whose specialty is in open fire grilling. I will show you how to grill kebabs + chicken wings perfectly. I will explain what type of meat goes on various skewers, the process of marinating and how to keep the meat tender. I’ll give a tutorial on spices and we’ll prepare together (hands-on) side dishes of tzatziki (yogurt, cucumber and mint), Antep ezme (spicy Kurdish salsa), and onion salad with sumac and isot. In a non-private session, another person may book and join you. We will walk together as a group and rotate between who is taking pictures. Make a Celebration Ring
We will begin with a peek in the Gallery, featuring jewelry handcrafted by US artisans, and a tour of our Studio School. I will also share some history of our 1890 Victorian-era building. In the workshop, you will use steel letter stamps and a hammer to impress words of your choice onto sterling silver strips. Then, you will form the strip into a circle and solder it together (with help). Finally, oxidize (blacken) the ring, and polish to your desired finish. We limit the workshop to four students to guarantee lots of personal instruction, as well as the opportunity to get to know your classmates. Other things to note Unfortunately, our Victorian-era building is not fully accessible to the handicapped.
