The trail begins in Gracciano and continues to the Spugna bridge, dotted along the way with smaller bridges, gangways, stairs and equipped passages, not to mention comfortable areas with tables and benches for relaxing. By walking, you can take in the history of Colle and the bond the community has with the river, even if only by observing the works of hydraulic engineering (like the historic millraces restored by Ferdinand I de’ Medici) that, bringing water to the city, were important for many activities, especially artisan workshops. This trail thus not only introduces you to nature but also history, like the Caldane, ancient basins holding water with beneficial properties used in the Etruscan and Roman eras: these baths are the favoured destination of locals in the area, who come here for a bit of relief in the summer. Equally surprising is the Diborrato, a deep lake formed were the river transforms into a thunderous waterfall 15 metres high.

We provide a comfortable environment located in the beautiful village with a panoramic view of the Sienese hills. You can sit at the tables with your old friends, your family or with your partner for a gastronomic experience based on grilled meat, on the many traditional Tuscan dishes and on pizzas that are cooked in a wood oven. We guarantee the quality of raw materials and the possibility of having a courteous and attentive service. We are open every day on Monday only for lunch from 11:30 to 15:00 and from Tuesday to Sunday from 11:30 to 24:00 in the evening. You will have a large parking area where you can leave your car without problems.

We love the pecorino rosso best with local honey! Our story begins in 1948 with the birth of our father Venio in San Donato, a small village of a few houses a few kilometers from San Gimignano towards Volterra. In those days our grandfather Libero was a cattle dealer: while the sheep were waiting to be sold our grandmother Imola took care of them and milked them; with the milk obtained she produced some form of cheese that the people of the village came to buy at her house: thus, almost by chance, our tradition of Casari was born. In our farm in Castel San Gimignano which was called "Il Cardino" our grandmother and then our father Venio began to produce cheese: the milk was processed raw with "presura" (vegetable rennet) and aged on wooden boards, not in a cold room but in a room of the house. From these memories was born the desire to rediscover these old flavors and these ancient manufacturing processes. Even the shape of "Cardino" was taken from the memory of the old terracotta coccini that were used by our grandmother.
