The wait for this historic working-class brasserie is well worth it - particularly because it's so inexpensive! Bouillon Chartier does not take reservations but you'll want to reserve a night for a table in this beautiful large dining hall. Note the little drawers that were once filled with the cloth napkins for local workers - Le Bouillon Chartier still offers a decent, typical French meal, served fairly quickly, in order to get back to business. This won't be your favorite meal in Paris but it will definitely be a memorable experience! This location is the oldest - operating since 1896 - but there are also now Bouillons in Pigalle and République, and fancier establishments in the 6th and 10th arrondissements.
