We are naturally quite distressed at this largely negative reaction on the part of our guest. We will certainly look at our systems and performance in order to correct any deficiencies that we find. A number of questions and observations on our part, however, do arise from this review. First and foremost, we cannot fathom why during the three days of your sojourn with us you never mentioned any of the supposed shortcomings listed. Our reception is open from 08:00 to 20:00 every day, and our staff had many encounters with you, there were numerous occasions when you could have mentioned these complaints. Certainly we would have immediately provided a thorough cleaning of your room and bath if even one of the problems you cite had been brought to our attention.
We are very sorry that you were not pleased with the dinner experience; the fault would seem to be ours that the true nature and philosophy of Spannocchia was not adequately communicated to you. Perhaps it was not understand that the interns you fault for not providing better service are actually farm interns who had been working in agricultural activities since 7 am that day, and take turns serving dinner only as part of the shared community activity. In spite of their already full days, however, they are always happy to share their experiences with guests.
The comment that we are a bad representation of Tuscan cuisine concerns us greatly, as our food production and meals are of paramount importance to us; we are chagrined that you did not appreciate the dinner with us. But, we do find ourselves wondering whence comes your knowledge of Tuscan cuisine, on which this judgment must be based. We are a totally organic farm with centuries of history behind us, growing local varieties of vegetables, producing certified Tuscan wine, and raising heritage breeds of Tuscan pigs and cows. The owner’s family has been in possession of the property only since 1925, but she can document her family’s presence in Tuscany since at least the 14th century. Our main cook was born and grew up on the property, the daughter of one of the estate’s tenant farming families, and has a total knowledge of Tuscan cuisine, the real thing, flowing in her veins. We have collaborated with Slow Food, including producing many dinners for local, Tuscan Slow Food members for a number of years. We are all passionate about good food; some of us are true experts in the field.
We recognize that it is always possible that a series of unfortunate circumstances led to our guest having a less than wonderful experience at our dinner table one evening, but we are confident that our meals in general are high quality, excellent value representations of the best real Tuscan cooking. It is true that there are many good restaurants in our immediate area, but we sincerely doubt that cuisine of similar quality and authenticity can be easily found for €22.
