Country Retreat for Food Lovers is located within easy reach of major highways and the thriving, revitalizing area of Hudson NY, which has many small businesses and is committed to farm to table sustainable lifestyle.
Rachael is an remarkably flexible hostess. First, I booked quite late for Thanksgiving due to my health. Rachael was very helpful with my continuing need to change plans: we had a super bad winter storm and after many possible permutations, I ended up not staying there at all. We were, due to her willingness, able to stay in contact throughout the storm and my changing plans.
For specifics at the house, all I can say is that Rachael was attentive in detail to my dietary and room/house temperature needs.
If you're in the Hudson/Valatie area, I highly recommend you speak with her about making arrangements. Rachael couldn't have been more helpful and is a superb hostess.
Rachael went well above and beyond her hosting role for us! She baked us fresh, delicious pastries every morning, provided delicious coffee, and best of all, wonderful conversation!! My boyfriend and I spent several hours over the course of our stay chatting food, Brooklyn, and life with Rachael. I highly recommend staying (and being pampered by) Rachael!
The room itself was lovely. The bed had a heated mattress cover for cold nights, and was very cozy. The space itself was very private - the room opened into a little den where we found a mini fridge stocked with delicious beverages like spiced apple cider, and water with cucumber. Rachael left us lots of little goodies during our stay - cookies, a rum-based nightcap next to the bed, homemade mouthwash, marmalade to take home... the list goes on! If you're looking for a low-key, restful country retreat, this is the spot for you.
Rachael was an outstanding host. The homemade treats and cozy room made us feel right at home. The room provided a perfect amount of privacy and was clean and comfortable. The house is on a spacious plot of land and the surrounding area is really scenic. Rachael had some great suggestions for restaurants and local sites to visit around Hudson. Overall, 10/10 for this experience!
This was one of my first AirBnB experiences, and it set the bar really high. Rachael goes above and beyond to provide thoughtful touches that really make a huge difference. In addition to a beautifully appointed room with private entrance and master bath, there are homemade bath salts to accompany the fluffy towels, a specially prepared night cap and homemade cookies to send you off to slumber, and bespoke, warmed pastries, tea, coffee and jam to greet you in the mornings.
Rachael and her housemates are all accomplished chefs and work in the food industry, so chatting and learning about all they do was an added bonus. We had the most wonderful weekend picnicking on the lawn, lazing in the porch chairs, and relaxing in what felt like very cozy luxury. I will definitely be coming back!
This accommodation is correctly labeled as country and as such it may be a bit of an adjustment for a city dweller (me). The room and bathroom are off in the back of the home on the second floor with its own separate door which is convenient. Rachel was cordial and very efficient. She provided a PDF the day before my arrival with the details of the accommodation and went over it again when I checked in. I did not meet the other residents of the home or interact much with anyone there during my one night stay. I found the kitchen door leading into the main house closed when I came back to the home so I can't comment on common areas, etc because I didn't experience that. The room itself was agreeable. It would be nice if there was a chair or table to unpack on and a nightstand next to the bed with a close electrical plug. There was no heat on and the room was quite cold but once I got under the comforters it was alright. I was also offered lots of cookies and drinks, etc which I didn't not sample, however the baked pastry in the morning was delicious as was the coffee.
Rachel is a lovely friendly person who was there to welcome us with treats in our room and in our fridge . Rachel is committed to quality food and the provenance of it is key , this was great for us as she also made great recommendations of where to eat and what to look out for as well as providing us with tasty treats for breakfast . After a frenetic few days in New York it was a delight to stay with Rachel and enjoy the peace of the countryside . Whilst Rachel kept a low profile and we saw little of her she made it clear we could contact her at anytime . Our rooms were lovely , in keeping with the style of the house but with modern twists and with everything we could ask for . Bobby, her pet dog was a bit of an old softie but in truth we never saw him unless Rachel was there too . This area is great for exploring the Catskills and areas around the Hudson River . Hudson itself is a great little town with lots of great shops and places to eat . A great find . We loved it and would love to come back . Caroline & Gary from England

This was the most wonderful first airbnb experience I ever could have asked for. Rachel thought of everything and made the trip so special. There was homemade granola, the most wonderful yogurt and coffee, fresh baked goods in the morning, homemade mouthwash, the list goes on and on. I have many dogs at home and so having her pup there made me so happy. Its about 10 or 15 minutes from the main street in Hudson, which was perfect for me. I really can't thank her enough and would recommend for everyone to stay here!
Our stay in Rachael's country retreat was delightful. Rachael was very helpful with information about the area and with restaurant information. The muffins and other treats were fabulous.
Rachael made us feel very welcome. She was generous with her time and very hospitable with all the little treats she gave us. She was great to chat to and shared her knowledge of the area and gave us tips for cool places to visit. The farmhouse is lovely and the bed was incredibly comfortable.
Loved this place! We had such a nice weekend here. Although our host was not able to be there, she left detailed instructions of where to locate our key, all the amenities, and where to discover all the goodies (and there were many). I was tickled at all the homemade goods. Our host put a lot of effort into the space itself, and the extra details like baked goods and homemade iced teas and apple cider. We would definitely stay here again. A lovely retreat.
Wonderful person, enthusiastic, and really interested on everything, coffe and cacao plantation, architecture and all the work done by students and craftsmen (objets, lamps, tables, etc) She was curious about our project in general. Very communicative and warm in her approach to us.
We are pleased to have received in our house Rachael and James, they were a very nice people, simple, responsible and willing to learn about our culture in the carnival festivities. The time was very short and had to leave early from the house by prior commitments. From our side everything was fine and I think we help where possible. We hope to have another opportunity to serve and share more time together.

Rachael and James are a super nice couple and great guests. They both seemed to love everything about being here, and really took advantage of what we have to offer here and in the area in the time they were here. They were quiet and kind and clearly enjoyed themselves, while still extremely responsible. They were excellent communicators before, during and after their stay, and they left the flat in really immaculate condition. Rachael actually stayed at my apartment while I was traveling, so we haven't yet met in person, but communication has been great. She arrived in NYC just after hurricane Sandy, and actually used the loft to make pies to deliver to hurricane victims! Since I wasn't in NY at the time, I was glad that at least the apartment was helping toward that cause! My roommates have mentioned how fun she is to talk to. I would definitely recommend her as a guest.

Rachael,was the perfect guest, quick witted and chatty, full of fun,and finding her way in life, she enjoyed our visits of the region together,and especially enjoyed the sea food on offer at cacale her interests are varied and wide which opens many gates for conversation,i hope that in years to come she will ;remembe rher time in the baie! and the impression she left ,and if she would like to return she will be more than welcome
Rachael stayed with us for a month. Not only is she an amazing housemate who is kind, awesome, and generally a lot of fun BUT SHE IS A CHEF. She'll sneak up on you while you're making a sadface and then hand you a plate of pure awesome and you'll be like "what the hell is this?" and she'll say something like "anchovies" and then you'll be confused because anchovies are gross but the food is delicious so you'll just be quiet and eat it.
Rachael is full of awesome knowledge about things I don't know anything about, and we really love it when she randomly teaches us. She is incredibly awesome, and you should try to get her to stay with you if you can.
