I currently work and live in San francisco, California. I grew up on the east coast near the shore in a small town in New Jersey. After graduating high school, I decided to enter a Culinary Arts program in south NJ. I found my love for cooking when I was young. Always having a job in food industry, it was easy to make the decision that food was my life. I can not say that growing up I learned my skills from my mother or grandmother. Anything I did cook and learn growing up was mostly on my own. My family was small, and everyone worked seven days a week. So learning the family secrets and recipes from years past was not an option. I have no regrets, and would not change anything.
My work has had an immediate impact on my life. I've been very fortunate to find jobs that best fit me during my career. I have built relationships that I know will have for a lifetime. Sharing experiences with others cooks. Learning from everyone I possibly can. You can never stop learning.
Traveling has been a dream of mine for years. There is too much to see, and even more to eat. I could never just stay put in one area. Everywhere you go, there is something new lying right around corner. But you will never know unless you get out there and see for yourself.
I never thought traveling could be a reality until I met my girlfriend, Kelsi. If you haven't thought about it already, yes we met working at a restaurant. We met in NJ, and after three years together we moved to California. Moving out West was something I wanted to pursue immediately after graduating culinary program. For a culinary grad, California was the place to be. Most of the produce used in US is grown on West Coast. California wine is growing each year, and Napa Valley is an hour drive away.
I have been to Europe once in my life, that with Culinary School, and that was a eight day trip to Vienna, Austria. Took classes at academy in Vienna, guest-cook in kitchens throughout the city, and enjoy some of the finest pastries. I also have traveled to Hong Kong and Mexico. Hong Kong is my favorite destination I've been to to date. The food there was not something you see at your Chinese restaurant down the street. This was real chinese cuisine. For me, the food is focal point of my trips. You can learn just as much eating your way around town, as reading it in a book. Thats what I really enjoy. Tasting the years of cuisine in a single bite. Thats what I dream about when I speak of traveling.
We have been planning a trip to Europe for two full years and we are so close to it becoming a reality. My girlfriend and I having been dating for five years. We both agree that soon we will want to settle down, buy a house, and then start a family. But she's never seen anything outside the US. This is our time to explore the world before its too late.
Car Pe Diam... Seize the Day. Thats how I love to live. Its the only way to live.
