The bar at this amazing-looking place is run by my old head bartender, Jay Rivera. His fresh, inventive ideas really shine through in his drinks. It’s a gin bar primarily, so most of the cocktails are gin based. And as it’s run by TV chef Jamie Oliver, the bar snacks—like short rib croquettes with plum sauce—are incredible. Get the Wilson’s punch. The amount of work that goes into this drink is silly. It takes about a week to make and contains gin, clarified coconut milk, and clarified lime juice, so it’s completely clear. It’s served with a clear ice ball that has a frozen viola in the middle of it. It looks and tastes amazing.
