The space

Open June - October, centuries old, rambling bed and breakfast, tucked into the hills south of Carcassonne; winding staircases, ancient stone walls and beams, parquet floors - open your shutters each morning to the lovely old square and feel like time really has stood still for 50 years. Our rooms are a lovely mix of old and new; antique French furnishings, white linens, super comfy beds and modern bathroom fittings. Bath products, hairdryer and magazines in all rooms. Complimentary tea and coffee, good WiFi and free parking around the village. We offer cyclist and family friendly accommodation, baby equipment on request.

Prices are € 78 for 2 people in a double or twin room. Continental breakfast of fresh local and homemade produce available € 7. A cot can fit in all our rooms at no extra charge.

The Barn Room
Spacious double height room in the original barn at the back of the house so a bit cooler in summer. With en-suite shower room, parquet floors, vintage wooden bed with comfy mattress and feather filled quilts and pillows. A tiny balcony overlooking the terrace and old churchyard to the fields and hills. I also have this room listed separately.
Room 1
A double room with antique French bed and views of the square & church. Shuttered windows, wool rugs on parquet floors ~ the mix of old and new is delightful. Separate large, lovely private bathroom (down 3 steps) with claw foot bath, rain shower and dual sinks, "...the bathroom was bigger than our apartment in Rome".
Room 2
With 2 single beds and views of the quiet village square & church, antique French armoire, old fireplace and chateau style mirror. Separate large, lovely private bathroom (down 3 steps) with claw foot bath, rain shower and dual sinks. Rooms 1 & 2 are inter-connecting and are fabulous for families and friends.
Larger parties, up to 6, may also be accommodated in the self catering cottage next door which I have listed separately.
Dinner is served each evening, € 30 for 4 delicious courses and a choice of quality regional wines; please be sure to reserve in advance. Served in the summer on the candlelit terrace to the sound of the cowbells or on the square by the church. In cooler months the ancient stone walls of the dining room provide a lovely ambiance. Nick is cordon bleu trained and can accommodate special diets including vegan and dairy and gluten free, please just ask. His food has great reviews, traditional French home cooking with a fine dining twist. We grow much of our own produce organically on the potager.

Surrounded by wildflower meadows, mountains and lakes, the walking, cycling, mountain biking, bird watching, all from the back door, are fabulous. The village has a farm shop selling local produce, tree lined Chalabre is our nearest town, an easy 3km ramble or cycle for cafes, bars and shops.
We offer cyclist friendly accommodation, bike hire is available locally, we have maps to lend and can advise on routes. Wild swimming in the lakes and river is a treat. The water is warm in the lakes in summer, Montbel is 5km, Puivert, 11km where you can barbeque your purchases from the night market each Wednesday in July / August. Carcassonne Plage is about an hour and offers a great alternative to the coast.
Explore ruined Cathar castles on rocky outcrops, Montsegur, Puivert, Perypertuse and Carcassonne are all an easy drive. Visit vineyards, medieval towns and villages, prehistoric caves and local markets - Mirepoix is 15 minutes drive and hosts the best farmers market on Monday mornings. The Prehistoric Park, Tarascon, butterfly farm and dinosaur museum are great for kids.

Guest access

Comfy guest's salon with books and board games and beautiful views of the square. Lots of outdoor spaces for dining - the square, the roof terrace, and the covered porch opening onto the terrace with comfy loungers. "Honesty bar" open all day, dinner served every evening, please reserve in advance.

Other things to note

The house is quirky with changes in levels and 1 or 2 places where you must mind your head. However, with a bit of care, even the very young and the very elderly have survived their holiday!

A warm welcome and cup of tea made us feel right at home from the start. The hosts were eager to make our stay pleasant and informed us of nearby activities, events, sights and ideas. They knew the area very well and their suggestions were great and accurately described. Our bed was really comfy and the room was well appointed. The whole building is ancient, beautiful and full of history. We hiked some Cathar trails, prowled the chateau at Puivert, ate in medieval Mirepoix and spent an evening dining al fresco by the lake and chatting with the locals. Superb two night visit.

Carolyn was a fantastic host. The facilities and room were very clean and thoughtfully prepared. Carolyn was extremely helpful and easy to communicate with, both before and during the booking. The village is truly secluded, peaceful, and very picturesque.

Very welcoming B&B with lovely linens, comfortable beds, bathroom and gracious hosts. Good communication before arrival and suggestions for lunch in the area. Write up is accurate except that there is a 6 euro charge pp for breakfast that I did not anticipate and did not note it reflected on Airbnb site.

Response from Carolyn:
Kimberly, sincere apologies you weren't aware of the small charge for breakfast. It is stated on my Airbnb listing under the prices of the rooms, I will see if I can highlight it a bit more. It's also on the list of services in the bedrooms. Apologies again, I hate to think that anything would spoil someone's stay. Regards, Carolyn

My family really enjoyed our stay at Nick & Carolyn's welcoming B&B! They made us feel like old friends coming for a visit. The area surrounding is beautiful. It is a nice location from which you can take day trips...only wish we'd had more time! They were helpful and knowledgeable of the area and culture. We enjoyed many delicious meals from an attentive chef! We especially liked the emphasis on using fresh local ingredients, as they are in abundance in the summer in southern France. We also liked Nick's willingness to prepare certain foods and even adapt his cooking for our needs. Nick & Carolyn are great hosts! As far as the accommodations, everything was very clean and nicely decorated, which we appreciated very much. We were in rooms 1&2 and the only things we would change would be to add a small fan in each room for the hotter summer months. As well as some lighter curtains in room one (which is near a street light) during summer so as to block out at least some of the light while allowing the window to be open for some air. These are small things in the overall wonderful experience that we think would have helped us to sleep a little better. We would definitely return to stay with Nick & Carolyn and we would recommend their charming B&B!

We loved Carolyn and Nick's! The B & B is at once spacious and cozy with a very comfortable sitting room and terrace. The rooms are very nicely appointed with nice views and comfortable beds. We enjoyed dining on the terrace and getting to know the other guests. Our stay was short but thoroughly enjoyable. Next time, we will have to stay longer. I would recommend Carolyn and Nick's B&B to anyone.

My parents, husband and I stayed at the delightful B&B of Carolyn and Nick early June 2013 for 3 nights (should have stayed longer but had to move on). The location is perfect for day trips to the Pre-Historic Park, Grotto Niaux (reservations are a must), Vals, Foix, Montseguer and Mirepoix-to mention only a few of the areas diverse sites. The hassle of making dinner reservations was of no concern after a busy day of touring as it was wonderful to return to Nick's delicious and creative 4 course dinners each night! A casual dinner in the dining room or terrace overlooking the hillside was at your choice. The beautiful weather allowed us to enjoy our breakfasts on the terrace and planning for each days activities. The bedrooms decorated in a comfortable country style and very modern bathroom were to our liking. Our stay with Carolyn and Nick was relaxing and they truly make you feel at home. Do not miss this very special corner of France and all it has to offer.

About Carolyn

We have owned our house in the South of France for 10 years during which time we have carefully restored and transformed it into comfortable, stylish accommodation that retains its long French history and character. We offer a choice of self catering in our 3 bedroom 18th century cottage or bed and breakfast accommodation. We are informal yet attentive hosts who enjoy meeting fellow travellers and making connections around the world.

Nick is cordon bleu trained but doesn’t mess with the food too much - it doesn’t need it. Vegetables are grown organically on our potager, other produce is purchased fresh and local, organic where possible. Menus reflect the seasons and the sun-drenched flavours of Languedoc washed down with some very nice Pays d’Oc wines. Please ask if you would like vegan or gluten / dairy free.

We hope to welcome you to our very French home nestling in the foothills of the Pyrenees.
