Interaction with Guests
Domaine de Palatz is owned and run by the Drinkwater family: Denise, Michael, Jodie and James. Collectively we have decades of experience in hospitality, business development, customer service and marketing.
Originally from the United Kingdom, and resident in France for the last ten years, we have travelled extensively throughout the world. Our move to the Domaine is the culmination of a dream to bring our experience of first class service, accommodation and food to all who come to stay.
With its wealth of historic towns, varied natural beauty and delectable dining, this region of France is a real delight, and rich with historic, scenic and cultural sites. Most of the Aude department lies under the influence of the Mediterranean climate, but it is nonetheless a very diverse landscape. Extending East to the Mediterranean are great plains of vines and orchards. To the south rears the mighty barrier of the Pyrenees, dividing France and Spain; west lies Toulouse and the Atlantic, and northwards we have the rugged and beautiful Natural Park of Haut-Languedoc.
Domaine de Palatz is situated right in the middle of Cathar country, and there are many nearby areas of historic (even prehistoric) interest, easily reached by car. From neolithic dolmens and menhirs (within walking distance of our property), to Greco-Roman ruins and the magnificent medieval villages, castles and abbeys that are scattered across the countryside, the region offers endless natural resources and opportunities for adventure and excitement. Hiking, horse riding, cycling, mountain-biking, golfing, kayaking, fishing, sightseeing, wine tasting, dining... there's something for every taste!
Close by is the famous Cathar fortress, Chateaux de Lastours. Carcassonne (20mins away) is the largest walled city in Europe, the fascinating medieval 'La Cité'. Despite its fairy tale appearance, Carcassonne has all the conveniences of a modern city with shops of every kind, supermarkets, cinemas, an abundance of fine restaurants, and a golf course.
You can also wander along the shady banks of the Canal du Midi, or perhaps head further afield with day trips to Albi, Nimes, Montpellier, or the beaches of the Mediterranean, which are less than an hour away by car. And of course you must let yourself be tempted by the pleasures of the palate: the great wines and gastronomy of the Aude, in the heart of the largest, oldest vineyards in France.
There is a beautiful lake five minutes walk from the property. The Mediterranean coast is less than one hour by car. Other beaches: Narbonne Plage, Port La Nouvelle, Port Leucate, Argeles, Collioure. All renowned for their 'fresh fish' restaurants.

We thoroughly enjoyed staying in this very well appointed B&B. At the recommendation of our lovely hosts we had a tremendous dinner at a restaurant in a nearby village.
Was everything we expected and we would definitely recommend anyone to stay.
The listing was perfect. Actually the accommodations were excellent. the location was more rural than we expected but that was an advantage. The country side and local towns are interesting and historical.
The welcome exceeded our expectations. As soon as we arrived we were treated to wine and a great orientation to the area in general. The next morning at breakfast we learned the details we needed for the days planned activities. Each day provided a new briefing for what we had planned.

James and his family were excellent, welcoming hosts. Their entire property gives you the feeling that they want you to have a good time. Little thoughtful details are everywhere, from the fresh fruit in the bedroom to the well stocked honesty kitchen and bar by the pool. The property is beautiful and the area is wonderful. We'll definitely be back.
