What you'll do

I will show you all the phases of the preparation of handmade pasta according to the Maremma and Tuscan tradition, from tagliatelle, pappardelle, tagliolini to the typical Maremma tortelli. After the preparation of the pasta we will focus on the preparation of traditional Maremma sauce to match: typical Tuscan meat sauce with tomatoes, called ragù. Afterwards we will taste the dishes prepared by us tasting an excellent local organic red wine.

The experience can also be held in English. I lived abroad and I speak English very well.

I live in Arcidosso on Monte Amiata in the province of Grosseto about an hour from Siena. The experience will take place in my home, in a suggestive location located in the old town. I have always had a great passion for cooking, and in 2017 I decided to specialize and deepen my knowledge in this area. After obtaining a diploma with the Italian Food Academy in Milan, I worked three years in restaurants as a cook and assistant cook. It was a great experience! Francesco had us (me and my girlfriend) in his home. Very authentic and ancient town ( the way to the town was amazing for itself). He was very welcoming , gave us a wonderful feeling at his place. We asked Francesco for vegetarian menu. We made cace e pepe and spinach & ricota ravioli. The cooking lesson was mainly focused of how to make the pasta, cook it and flavor it. Francesco has alot of knowledge , answered to all of our questions and gave us a great personal treatment. It was a great experience and I really recommend it! Thank you Francesco!

A superb experience for my fiancé and myself. Francesco really caters for all levels of culinary knowledge with his wonderful history in cooking. We covered the basics of paster making, how paster varies in regions and also had the chance to create a superb beef and pork ragu. Kan absolut anbefales. Francesco er super sympatisk, og god til at lære fra sig. Vi havde en virkelig dejlig dag, hvor vi lærte at lave pasta fra bunden.
