What you'll do
The class is a combination of demonstration and hands on cooking. I will show you a special technique to make very tasty Japanese rice and how to make dashi from scratch using seaweed and bonito fish; all-natural ingredients. The type of fish depends on what is in season but will most likely be fresh yellow-tail, mackerel, or salmon. For meat, we will use chicken (no pork or beef). We will also make crispy tempura and more! Most ingredients I use are not difficult to find in your local store; I will also give you alternative ingredients, if you like, for things that are harder to find in the store! When we eat together, you will have the choice of tasting local sake and roasted tea. We will also have Japanese sweets from my favorite local traditional confectionary!
Welcome to our sweet home kitchen in HORYUJI, Japan! I learned how to cook traditional home-style Japanese foods from my grandmother and mother. Let's enjoy cooking together with my family recipes near the Horyuji Temple (UNESCO World Heritage site)! We will cook Japanese food(washoku) and arrange the foods in a natural Japanese style. The class is a combination of demonstration and hands on cooking. In the class, I always show you a special technique to make very tasty Japanese rice and how to make dashi (clear soup) from scratch using seaweed and bonito fish; all-natural ingredients.
