What you'll do

Have you ever tried the meat of a fresh cacao-bean? Have you ever used pure cacao in a savory dish? If not you should take this opportunity. For my course I retrieve fresh, organic cacao-beans from Bahia, which we will open together so you can experience it's taste, smell and texture. (Please note that this is subject to availability. The course will take place also in case I can't have fresh cacao beans. I'll inform you beforehand)

When you arrive at my open-air patio and kitchen I will welcome you with a special drink. We will have a short introduction on the world of cacao and chocolate. We will talk about history and health aspects of "the food of gods" as well as social aspects of cocoa production.

My course is not about chocolate and all the sweet things you already know. I want to surprise you and open new horizons. We will create a complete savory menu with cacao pulp, powder and butter.

We will use no meat or other animal derived products but only fruits, veggies, legumes, grains, spices and, off course, cacao, and lots of it :)

Finally we will enjoy our creations accompanied by a good bottle of Brazilian wine.

COVID-19-update: I'll keep us all safe! We will be outdoors all the time (but covered from the elements), I have a big fan for extra ventilation and my groups are limited to max 6 people!

Where you'll be

The cooking class will take place in the colonial Villa from 1897 where I live and offer hospitality through Airbnb. I transformed the former wash house in the backyard into an open air kitchen. In front of it I have a patio under the mango tree which was planted "by accident" around 100 years ago and is now 20+ meters high. We'll eat there. The Villetta is a incredibly peaceful place and my green refuge from the chaotic city out there.

AMAZING!!! This class was truly enjoyable from start to finish. Juliane knows a lot about food and brings her expert knowledge into all aspects of the class, I definitely learnt a lot! It was hands on, and we made soo much delicious food, 100% the best food we've eaten on our trip to Rio so far. Great people to cook with, and we did it all with 1 (or 2) caipirihnas in hand. You absolutely must take this class if you're in Rio, it's not to be missed!

This is my second event with Juliane in her magical plant based kitchen and I love her commitment to her authentic style in the kitchen. She has many connections and knowledge of Brazil and shares her passion for her cooking plant based meals in a beauitful thoughtful manner! I loved it and want to come back for a third event. Juju is open and welcoming to all of us at her house, which is a germ in Rio tucked away on the hill side. The cooking lesson is not only just fun but also educational. We don't need meat to feel satisfied at the dining table, especially Brazil is such a meat-orianted country and I am not vegetarian. Juju gave us a quick lesson about cacao and its history before we started cooking. She is capable of answering all my questions, from fresh fruit to roasted beans. I am in Brazil for a coffee origin trip and this experience echos to that in many ways at the same time gives me different tastes of this beautiful country. Of course, Juliane is the key to unlock all secrets in cacao cooking. It's more like a cooking and dinner gathering at a friend's house than a course. Don't plan anything else that evening, otherwise you will miss good time hanging around with them.

I consider myself one of the biggest fans of Juliane and since I tried her food the first time I decided to try all her experiences. She is wonderful as a person and as a chef too. And for everyone who loves trying new things, I think this experience is a must! I never thought of cacao as an ingredient to cook with and how wrong I was. I kinda expected some sweet chocolaty things, but this cooking class is way better than that. We learned a lot about this ingredient and how good it is actually for health and made a lot of dishes together. All of them were AMAZING and super special, I have never tried anything like them before and I am in love. If you want to try some local food but you are already done with the mainstream ones that you can find on every corner, try this experience and you won't regret. Oh and that caipirinha is the best! I'm so glad I went, such a good night!!!!

After my trip through South America I wanted to let it end with a special activity. And this is was this cacao cooking class with Julianne definitely was! I felt welcomed from the first second on. The class was perfect, since I have learnt more about cacao and the recipes we cooked were just delicious! If you like chocolate and are looking for a nice and special evening, definitely book this activity!
