What you'll do
We'll meet on our own terrace, with a great view on the Tuscan countryside. There, you will have the opportunity to meet the other classmates. We'll move inside: talking about of our organic farm, our vegetable garden, our sustainable production systems, I'll introduce the schedule for the day , assigning your work stations and giving you all the necessary to cook together. I'll talk about the quality and genuineness of ingredients we will use. "Good and Simple" is the base of our cooking philosophy: one of our intents is to give to you the "tools" to choose the best ingredients needed, when you will be back home. Our lesson is dynamic and include different experiences: cooking lesson, cooking show, food tasting, wine tasting ... and last but not least, also the friendly and funny social experience, with the other classmates! After about 3 hours of preparations, you will start to taste, the 5 courses menù, wich include: -appetizers -two types of fresh pasta: Pappardelle and Gnocchi (or Ravioli) -two sauces for pasta -a dish with the noble "Chianina beef" and vegetables -a dessert (usually, our famous Tiramisù) I'm also a Sommelier, so, paired to each dish, you'll taste a different local wine I selected for this sensorial path. The class will ends sitting relaxed on our amazing terrace (depending the weather), enjoying the dessert and the gorgeous view!

Owner of Le Caggiole, millenary farmhouse and home of my family for more than 7 generations. I spent many years with my grandmother learning to cook dishes of the oldest tradition, for our family or for the guests of our own Agriturismo. Based on this precious cultural heritage, I studied the ingredients, their seasonality and sustainable production systems, as well as cooking and tasting techniques. Following this passion, since more than 10 years, I have been Chef at Agriturismo le Caggiole and for 3 years, also a Sommelier. The last 8 years, I share these passions by organizing cooking classes for my guests.

Where you'll be
Podere le Caggiole: millenary farmhouse surrounded by olive groves and vineyards, home of my family for more than 7 generations. The hall, setted up in part as dining room and in part as a kitchen workshop, is the oldest part of the farmhouse. On the walls, original finds witnesses of our own story: from the most ancient, stone crests found during the renovation works, until the most recent, ancient work tools used by our own ancestors.
