What you'll do

The first step will be to show you the ingredients that you can find in all Oaxacan homes, one of the advantages of our experience is that we have a garden with herbs and organic chilis.
Because the best way to learn is by tasting, we will offer a snack that will include chicharron, cheese, quesillo, chapulines, and a mezcalito.
Have you heard anything about the metate and how tortillas are made by hand? Here we will explain to you step by step and best of all you will have the opportunity to make them yourself.
One of my specialties is sauces made in a molcajete and they will be perfect to accompany a delicious Oaxacan barbecue that includes jerky, cecina enchilada, chorizo, grilled water chilis, memelitas, fresh beans and a lot of guacamole. The mole is the emblem of our cuisine and we will make one of the 7 Oaxacan moles.
You can choose a dessert like arroz con leche, flan or lechecilla. Not forgetting fresh fruit water made with seasonal fruit. Everyone will participate in the different processes, cutting ingredients from the garden, making sauces and of course eating. Remember, when you visit a house in Oaxaca you have to come with an empty stomach.

My name is Sonia and since I was a child I had a great passion for traditional Oaxacan cuisine, and not only because I was born in this beautiful land, but also because I am very proud to have learned from the best cooks in the region.
My mother always told me that the only way to cook is in clay pots and on charcoal, since then I have followed her advice.
I have attained baking diplomas and I make cakes with organic eggs and fresh butter.
I would love to receive you in my home and share the knowledge I have obtained over all these years.

Where you'll be

Our class will be taught at our house located in a small traditional town 25 minutes from the city of Oaxaca, a very quiet place away from the noise of the city.
Our family makes the best Oaxacan cheese in the world and you will have to come and judge for yourself. Our house has an organic garden and all the food will be prepared in braceros with charcoal and clay pots

Fabulous experience!!!! Sonia, Baldo and her associates were well prepared and made us feel like family. We learned so much about traditional Mexican cooking. The ingredients were fresh. Sonia was very patient and kind while teaching us her techniques. We take cooking classes wherever we go but this was very special!! Highly recommend!!

When they say come hungry they mean it. Nothing more than a light breakfast the day of to ensure you can enjoy all of the great things you'll prepare. This is a truly special experience that I would've regretted leaving Oaxaca without.

This was one of the best things that I did during my visit to Oaxaca. It was one of the funniest cooking classes that I have ever taken. Sonia and her son were so attentive, congenial, and knowledgable. We cooked and laughed together, and the food was excellent. I enjoyed everything about this experience, including how well organized it was. The other participants were wonderful--particularly our jolly and adventuresome Australian friends. We cooked together, laughed, and learned in a beautiful setting. I highly recommend this great cooking experience in which you will make all kinds of delicious food. I would go back in a heartbeat!

Excellent afternoon cooking many things. Drinking mezcal and eating some of the freshest cheese we have ever tasted. This is the first class I have ever taken where you can cook something numerous times. We were able press many tortillas and try our hand at tossing them over the grill. Such a fun time.
