Very relaxing experience that created a deeper understanding and connected us to the Hida region past and present: encompassing farming practices, Japanese history, social organization, ecology, food sources, and traditions.
Our group of five was able to sit comfortably between the two tables (space for eight people total). We prepared three sample dishes using three different cooking methods (grill, hot pan, ceramic stove). Experiencing the traditional method of cooking on a magnolia leaf - beef, miso, mushrooms - will not be forgotten.
Don-san was very engaging and knowledgeable about the region and its history. He was very kind and gave us local recommendations and said we could contact him with questions about Japan at any time.
The experience concluded with a short video and enjoyment of a local treat (chestnut mochi).
