What you'll do

We’ll start our journey at Omicho Market -- the hub of Kanazawa’s food culture. Here, we’ll explore the stalls and wind our way through the bustling crowds to seek out the best in-season ingredients, and choose fresh seafood and vegetables that we’ll use during our cooking class.

Once we’ve chosen our ingredients, we’ll head our way back to the kitchen! I’ll teach you tips and tricks on how to cook, along with the history behind the food and ingredients.

After we have cooked, all there is left to do is to eat a delicious home-cooked Kanazawa meal! Taste what you have learned, and relax and enjoy what you have created. The lunch meal is enough to fuel you for an entire day of sightseeing.

Hi! My name is Naoko!

I am a food coordinator in Kanazawa, and I will teach you everything you need to know about Kanazawa food. I used to work in the entertainment industry, but decided to become a cooking teacher 2 years ago.

I grew up in this city, and have always had a love for this city’s food culture since I was young. My mother is also a cooking teacher, and taught me everything I need to know about Kanazawa cuisine.

We'll tour and explore the famous Omicho Market. The outdoor market is sheltered by a roof, so this is location is perfect no matter what the weather! The cooking class will be conducted at a private kitchen located in the centre of Omicho Market (5 minute walk).

This was one of the highlights of our trip to Japan. Naoko was really knowledgeable, introducing us to a range of Kanazawa foods and answering all our questions in detail. The cooking class itself was excellent, we came away with some new recipes and techniques to try at home. Afterwards we were also treated to a tour of the cooking class premises, a beautiful traditional building which was formerly a kimono making factory. Thanks so much Naoko - an excellent experience that we’ll look back on fondly for many years!

Naoko was a wonderful host. Right from the beginning she made us feel welcome and at home. The food was delicious and her instructions and explanations were wonderful. learning about the produce unique to this region made the experience truly unique and once in a lifetime. She provided recipes and helped me with planning where to eat for the rest of my stay in Kanazawa. I can’t wait to come back and learn more from her. A truly wonderful experience!!!

The market tour and cooking class with Naoko was a highlight of our trip to Japan! Naoko knows everyone in the market (her family has operated a seafood business there for years) and she’s practically the mayor of the market stopping into many shops as we picked up ingredients for our lunch feast. She explained everything we bought for the cooking class (seaweed for dashi broth, fresh yellowtail they gutted and cleaned for us, vegetables, etc) and anything else that caught our eye (in this case, snow crab which was in season!) After 30-45 minutes in the market, we left for her nearby cooking facility which is a beautifully restored former kimono factory outfitted with everything we needed to prep lunch: recipe handouts, aprons, individual stations, etc. We learned how to make an amazing broth with freshly grated bonito and seaweed, mince fresh sardines for the soup, use special Japanese knives to cut the yellowtail for sashimi and make the perfect sticky rice. We can’t say enough about Naoko’s excellent culinary skills and attention to detail - this experience far exceeded our expectations!

Best cooking class I did on my travels with deep explaination about Japanese food, cooking style and serving techniques. I got all my questions answered, location was awesome and I also learnt about traditional Japanese houses. Will do another class with same hosts, highly recommend to everyone who is interested in Japanese cuisine and culture. Food we cooked was very delicious! Naoko is passionate, warm and welcoming. The market tour gave me insights that I didn’t have when I visited on my own the day before. She answered all my questions. I am an enthusiastic home cook and have a deep respect for Japanese cuisine which I read a lot about. I also enjoy knowing more about ingredients, how to choose them and best bring out their flavors. The location of the studio is stunning. It’s an old kimono factory. It has a beautiful little garden. The class is hands-on and thorough. I will be able to replicate the recipes plus I learned a bunch of useful cooking techniques. You can see also that Naoko is an artist in how she plates the food, the ceramics she chooses and even how she sets the table. I enjoyed myself so much that I reschedule my train for later the next day and took the tempura/Japanese omelette class. Thank you Naoko-san, I will cherish this memory of Kanazawa!

This is a great way to learn about Japanese cooking and especially about the Kanazawa region. Naoko is very nice and a great cook. We first saw the market and then went on with her to cook the meal which was delicious. If you buy some basic ingredients in the market you will be able to cook the meal at home.
