Cooking classes in Mexico can be a wonderful experience, but what happens when you return home and can't find the ingredients to make it on your own? I've got you covered.
We'll meet at my home in Condesa to prep and cook our meal together with a mix of traditional cooking equipment while teaching you how to swap it out with alternatives that are staples in every home kitchen.

We'll learn how to prepare* (and chow down on):

/ Classic Tinga (chicken or veggie)
/ Tamales (savory and sweet)
/ Chilaquiles (verde)
/ Agua fresca (varies according by season) with immune boosting ingredients

I'll also give quite a bit of history about the dishes, a brief knife handling demo, facts about our ingredients, cooking techniques, uses for would-be-organic waste, nutrition and gut health information, as well as a digital recipe book and global guide to Mexican ingredient shopping.

I started working in my grandfather's butcher shop at the age of 6, wrapping customers' packages in the same style as he had since the 1940's. Surrounded by farms, dairies, and homesteads, we spent our free time in nature, hiking, camping, fishing, and hunting. The dichotomy of the two food systems—self-sustainable vs. supermarket—inspired me to only eat the things I could grow or hunt, and cook myself.

I've maintained some form of this ideology for the past 29 years while traveling the world to gain knowledge and hone my skills. At 21, I began making the world my culinary classroom by making pasta with Italian experts in Florence, apprenticing with a Four Seasons/Cordon Bleu chef, sous cheffing a test kitchen in NYC, mastering luau emus with native Hawaiians, and now pressing tortillas with the abuelas and street food masters of CDMX.

Where you'll be

Just minutes walking from Bellas Artes in Centro Histórico, you'll join me in my kitchen loft in a bank building which dates back to the early 1900's. You'll be surrounded by some of the best street food and better kept secrets in the city: 2 blocks from the Zócalo, around the corner from la Pastelería Ideal, el Moro, and one of the city's most exciting markets, Mercado San Juan (the "exotic" or "insect" market) where most of our classes begin.

Tim was amazing and provided a great experience for the entire group from the minute we met. He took us to the Mercado and introduced us to all of the stalls and explained in detail the vendors and foods. We even got to sample some foods if we chose. We went back to his loft for the cooking lesson where we all were able to participate in the actual hands on lesson while preparing different parts of the recipe, which turned out amazing. I finally learned how to make Tamales. I highly recommend Tim if you are seeking a unique experience while in CDMX.

My fiancé and I fully enjoyed Tim’s Mexican cooking class. We met at the San Juan market where he gave us the opportunity to try local fruits and veggies along side exotic items like garlic crickets (which were quite tasty). We took short walk to his apartment where he showed us how to cook delicious Mexican dishes including my favorite, tamales. Though covid, I felt like Tim took the necessary precautions to protect everyone included. Highly recommend!

This was a great experience! Tim showed us how to cook three delicious Mexican dishes. He is a very passionate and knowledgeable chef. If you are in Mexico City, this is a must. He shared recipes and the history of the food we ate. Not only does he know about the food, techniques to cook authentic Mexican food, but he also has linguistic knowledge of the Nahuatl language.

Tim was very friendly and knowledgable! I would highly recommend going to the market first if you are a foodie as one of my highlights was trying all the different fruits on offer in Mexico! One of the most enjoyable days and the meal we prepared together was delicious and not your standard menu. The tinga was to die for and I have never had tamales like it!
