What you'll do

Sorting the cacao beans: Telling the difference between perfectly fermented cacao beans and non-fermented beans. Also seeing the standard of beans that are acceptable in the making of high quality chocolate. Also gives time to chat about where our beans come from, the social aspects of our production etc.
Roasting the beans: Learning our unique method of roasting our cacao beans and the temperatures we use in order to extract the best flavours.
Crushing the beans: Crushing the beans by hand. Using traditional techniques to crush beans using wood and stone and finding the perfect balance of energy exertion so as to not turn the beans into dust.
Winnowing the beans: Using traditional techniques of seperating the skin and the nibs of the cacao beans.
Learning about the grinding process: Seeing our large grinders/melangers in action turning cacao nibs into cocoa paste. Learning how we built the machines and why we grind for 80+ hours straight at slow speeds.
Tempering the chocolate: Students get to temper their own chocolate on cold marble.
Molding the chocolate: Students then choose their chocolate molds or freehand the chocolate they just tempered.
Bring home and eat their chocolate.
Other things to note
We are a functioning factory first & foremost and while we love to talk with our guests, after the class is finished I must insist we move to our boutique out front so that staff can resume operation.

Such a wonderful experience! Whilst it might seem like it's a long journey from Seminyak the time flies by. Our house was incredibly knowledgeable and passionate chocolate making.

Although it was out of the way from where I was staying, I'm glad I made the trip. It was exactly what I had intended to learn. Like one of the other comments mentioned, you will enter a village which specialises in terracotta. You will know that you've reached the correct place when you see a barn-like structure and the red sign on which 'Primo' is printed. Komang, Gusde's mother, is one of two main chocolatiers at Primo. As advertised, I took part in the bean-to-bar process (sans the various waiting times, such as for harvesting, fermenting, roasting, and grinding). It helps to have that sort of hands-on experience with the various steps of processing - from sorting beans to tempering the cocoa mass. I now feel confident enough to attempt the process at home.
