What you'll do

I teach a simple but comprehensive, hands-on pasta making class that will show you how easy it is to make your own pasta, and how to get great consistent results. The location is super central and easy to get to, and the class is affordable, detailed, all in mother-tongue English and all by hand - so no equipment needed at home to reproduce what we make. We each make our own portion of fresh pasta dough, roll it out by hand and cut it into tagliatelle and ravioli, then cook it all together and eat. While waiting for the dough to rest and then to dry, I'll demonstrate how to make a simple, everyday tomato sauce and how to make ravioli filling with seasonal vegetables. You'll learn some basic cooking techniques that are easily applicable to anything you're making at home and will easily up your pasta-making skills (even if using store bought pasta). Vegans have the option of making pici, a flour and water pasta typical of Tuscany or we can make other shapes like cavatelli and gnocchi Sardi. The price of the class includes the dinner. Local, organic wine is available at 3 euro a glass or 9 euro a bottle. It all takes place in our hostel's cafe and you'll be cooking and socializing with guests of all ages and nationalities.
Other things to note
We're vegetarian and can accommodate most allergies or intolerances (except gluten free) with advance notice. We can also accommodate for vegans by making eggless pasta.

Steven was really friendly. Passionate and knowledgeable on Italian cuisine. The food we made was pretty tasty and overall it was a pleasant experience. The 2 main issues I had with the experience were: - It felt like the host was pretty tired at the start and was kind of running through the motions. As the evening went on he did loosen up but it was a little flat for the first half. - As someone that was invited to go and didn’t read through the description I was very unpleasantly surprised to find out at the end that we were being charged for the wine. A group of 3 of us attended paying +150€ total for the cooking experience. As explained by Steven himself all of the ingredients were really cheap and to be honest I would have expected a glass or two of wine to be included in the package per person. Or at least mention it as you bring out the wine and offer it around to everyone so there’s no nasty surprises at the end. The actual amount charged was not huge and not the issue, it just left a really bad feeling for all of us. I appreciate Steven works really hard and strives to provide a great experience. If it were a little cheaper/the wine was included or pricing mentioned as it’s brought out and/or the host was a little more enthusiastic it would definitely get a 5 star but when we all left feeling a little bitter/disappointed I felt compelled to share my thoughts.

Cooking class was good and Steven was a great host, but just note that all you’ll be making is pasta and not the sauces. For this reason, we didn’t think it was worth the $50/person as we all stood around to watch him make the sauce when we expected to cook ourselves. Other than that, Steven seemed very knowledgeable about pasta making and Italian cuisine.

Steven was very friendly and the workspace was perfect for making pasta. There was a fun group dynamic. And the pasta was excellent.
