【Duration】4 hours

In this cooking class, you’ll be introduced to the art of cooking Japanese Zen dishes, often served at Zen temples across Japan. The class will include preparing for, making, and cooking a full course meal from scratch. We will begin with a sesame tofu appetizer, served at the start of Zen meal because of its symbolism of hospitality. This is then followed by a “miso soup” of potato and onion, also a common dish in Japanese cuisine. Salads made from fresh produce will also be something you’ll have a hand in arranging, including the citrus dressing that you will concoct from scratch. Once we are done preparing and making the appetizers, we will move on to the making of dashi stock, a savory broth that is fundamental to most Japanese cooking. The dashi broth will be used in the cooking of the next few dishes, which include “ohitashi” (seasonal vegetables soaked in dashi sauce) and “shiraae,” a tofu salad, served with a vegetarian sauce. In addition to these dishes, there will also be small side dishes to complement the meal. To conclude the meal, we will be hand-making and molding our Japanese wagashi, which can be enjoyed with a warm bowl of matcha green tea, whisked from refined matcha powder.

This workshop will be held in Terumi's house. The house is located near JR Ibaraki station which is 13 min from JR Osaka station by rapid train. And which 21 min from JR Kyoto station by rapid train. The rapid and local trains depart from platforms 4 or 5 at Kyoto station.

We had an amazing time with Terumi - she is a delight and we made Japanese food unlike anything we’d eaten in our two weeks here. Her personal touch and keenness to make us feel right at home was really special. She was very accommodating to our vegetarian preferences and the food was delicious. Terumi take us from Ibaraki Station to her house and cook an amazing dish using tofu as a main ingredient. All the side dish was very delicious too. Terumi also share alot of her homemade recipe and after coking everything, we are served in japanese style to eat whatever that we cook together. It is muslim friendly food and recommended to people who like to try japanese cook style and delicious tofu dish.

I and my sister really had a very good experience at the workshop with Terumi and her mom. They're so kind and helpful. The workshop itself is quite fun, not too informative which is boring but rather focus on practicing instead. We can ask Terumi anytime we're in doubt of anything about soy milk, tofu, ingredients and even cookwares. Terumi and her mom prepared many tofu dishes for us to practice in the workshop. We also got some useful documents (cooking instruction) from her so that we can cook ourselves at home. Terumi gave us many advice, not only about cooking tofu but also about attractive places to visit. We're truly impressed by their great hospitality!! We've never had this kind of experience overseas. It's totally different from what we did when we travelled abroad in the past (just sightseeing, shopping, eating, etc.) but I think it's worth spending your time with. I believe that you'll have a good new feeling from this workshop. It's another way for culture exchanging.
