What you'll do

Upon your arrival at the dairy shop, I will offer you the typical farmer breakfast of organic dairies while introducing the history of our little family business. I will conduct you in a culinary journey to discover the processing phases of local cheeses and dairies, starting from the milk to more than 100 types of cheese. We will assist from the inside the milk processing and cooking, the typical hand mozzarella stretching, the handmade cheese production between multiple tastings, and a small surprise at the end.

The milk processing starts at 9.00 am. If you are lactose intolerant, we suggest you taste tiny portions.

Where you'll be

The dairy shop is located in Montescaglioso, a small town where my father was born and raised learning the secrets of the art of natural cheesemaking using traditional, non-industrial methods and raw ingredients to make authentic Italian cheeses and dairies. We will meet in the dairy shop and from the laboratory you will discover the secrets and the various steps for making handmade cheeses.

Un'esperienza bellissima ed interessante, la consigliamo a tutti, mai mangiati formaggi così buoni! Bellissimo vederli all'opera durante le varie fasi delle lavorazioni e ascoltare le spiegazioni! Un'esperienza unica assaggiare il formaggio appena fatto. La qualità è dimostrata anche dal fatto che il mio fidanzato, solitamente ha problemi a digerire i latticini, questa volta non ha avuto alcun problema! Questa esperienza ci ha fatto da colazione e da pranzo assieme! Infine ringrazio ancora la famiglia che ci ha fatto sentire i benvenuti e come a casa!

Giuseppe and his family was wonderful. They explained us how they make different types of cheese from and how dis process was inherited from grandfather to father and then to the sons as well. The family was super friendly and answered all our questions. The cheese was delicious as well.

Giuseppe couldn’t join us, however we were greeted by Grazia and Nicola, who made us feel instantly welcome and like part of the family. Our Italian is fairly limited, but Grazia communicated clearly with us in English using an iPad translation app. We learned from Grazia about the cheese-making process and the many different varieties of cheese, while watching Nicola make them, and meanwhile eating lots (and lots) of delicious samples, before taking several cheeses home. They are lovely people who go out of their way to make you feel at home, meanwhile sharing their passion, accumulated over three generations of traditional hand-made cheese-making. From the customers that walked in at times throughout the morning you can see there is a lovely sense of community about the place. After this cheese experience, a walk around the enormous Benedictine Abbey nearby (4Eur/pp) is recommended, but moderate hustle is required to achieve this as it shuts for siesta at 1pm.

This was so much fun! We spent two hours learning about their cheesemaking from the cows to the final product! I think we tasted at least twelve different kinds of cheeses and milk and yogurt. It was a unique experience and the whole family is lovely!
