Teaching Chef and consultant in ecogastronomy, I am proud ambassador of the culinary heritage of Quebec, its terroirs and its artisan-producers. I co-initiated L'Atelier du Goût, a school on sustainable food, and La Transformerie, an organization that aims to stop food waste. My goal: to give meaning to what we eat. I was president of Slow Food Montreal for 8 years and co-president of Slow Food in Canada for 4 years, which led me to co-found the Slow Food Chefs Alliance. I am now a Councilor for Canada at Slow Food International. Throughout my engagements, I developed a fine understanding and knowledge on our native products and of the Quebec terroirs, a knowledge that I am passionate to share for you to live authentic Québécois culinary experiences.
