What you'll do

Your host, Nikos, a well-known chef who, after 30 years of cooking for the world’s movers and shakers in the bustle of cosmopolitan Santorini, decided to retreat to a mountainside home in Syros, will take you on an exciting culinary journey.
With your help he will prepare a wonderful meal with roots in the Mediterranean, but infused with his famed creativity in combining eclectic ingredients, flavours, aromas and textures to create surprising and truly delightful taste sensations.

You will experience how locally wild growing herbs like thyme, marjoram, verbena, wild capers and wild fennel, and even the precious kritama (crithum maritimum, or rock sampfire) bring the spirit of the Aegean to every dish. Nikos’ contagious enthusiasm and good humour will bring the spirit of conviviality in the best Greek tradition to your table.

The setting is his veranda with a stunning view of the bay of Kini where a special atmosphere can also be created by sampling Nikos’ impressive collection of music.

From the lovely starters, the wonderful main course to the gorgeous dessert, all paired with a fine selection of wines, Nikos will make sure that your evening will be an unforgettable one.

He is in love with creative gastronomy, but always with a keen sense of the experience of his guests. In his own words: “The way I understand the composition of a dish is clearly personal. However, it is always very helpful to listen to how my guests experience it. There is no point to try to recreate yourself through a dish out of selfishness. The only things that truly matter are the reception and the reward of being appreciated“.

His second passion also plays an important role: “Music is a very important element of my culinary evolution. In my cooking, dishes are compositions, sometimes with bold harmonious clashes, revealing a strong relationship to music”.
