What you'll do

How to make a gumbo. An authentic Cajun one. There are many different versions out there, especially in other geographical areas, but there is really just one basic gumbo.
You will help me in the kitchen to prepare and then eat a chicken & sausage gumbo. Chop, chop and stir, stir! Listen to my personal stories on how my grandmother taught me, some other good stories of our Cajun culture, as well as some great Cajun music. While it's simmering, we'll play 1-2 games of bourré, a traditional Cajun card game. The winner goes home with their choice of a traditional spice. I also offer an optional phone quiz to learn Cajun facts.
You'll leave with a life-long friend (me!) and the know-how of making a gumbo along with different family variations.
A good gumbo should simmer for at least 1 hour. Add 30 or so minutes to prep, and then an hour to eat. So we'll meet at my place at 3:30 pm and should be finished by 6:00, which will give you plenty enough time to go out on the town. I provide a copy of my AirBnB guide so you'll know what your choices are here in Lafayette, Louisiane! (in French also)

Sometime in the fall when the first cool weather hits Lafayette, we all rush to make a gumbo! Each family has their own twist on the recipe, but the basic gumbo is the same.
My grandmother, a Creole cooking enthusiast, taught me how she made hers and I basically follow her recipe & recommendations. I've worked on my recipe for years to fine-tune it and I think it rocks, especially since the last one I made for my family had the complimenting me for days!

Where you'll be

My little home is tucked away in a cute little diverse neighborhood. The kitchen is comfortably small, but is part of a nice & airy, well-lit living area. My dining room table sits 6 comfortably in front of a bay window overlooking my herb garden.
