What you'll do

Get the Real Oaxacan Cooking Experience

In The Real Oaxacan Cooking Experience, after drink a nice coffee and introduce ourselves and the Oaxacan traditional cuisine to you, we will choose the menu for the day, then We will walk to the Xoxocotlan local market to select and buy the freshest ingredients for our fantastic Oaxacan feast.

(Markets is 3 minutes walk) then, back at the kitchen, i will show you how to process masa to make fresh tortillas, quesadillas, tacos, tetelas and empanadas stuffed with fresh quesillo, squash blossoms, mushrooms and much more, also i will show you how to cook a spicy red sauce and mild green tomatillo soft sauce with ingredients picked from our organic farm to enjoy our appetizers on a nice set table.

After enjoy snacks we will start to cook a real Oaxacan 3 course meal (soup, main, dessert) It could be; Mole Amarillo or Costillas en Salsa Verde (fried pork ribs on tomatillo sauce) or mole Encacahuatado (peanut mole) and much more. Choose your own mole adventure!

We will go to the mill to process our mole & horchata water. You will also choose what dessert you want to make like; rice pudding, or fried plantain moletes with cream chesse or more options to choose from,

Sip a nice mezcal and refresh yourself with a beer enjoying a real traditional oaxacan feast under the shade of the trees

My place is located 10-15 minutes away from oaxaca downtown in public transportation, Enjoy our spacious outdoor garden surrounded by large palms, organic fruit trees and our friendly farm dogs. Our neighborhood market is nice, small & clean Full of folklore and colors, we can find all what we need to create our amazing Oaxacan feast, also is full of nice local people happy to help to find our ingredients

My 12yo daughter joined my partner and I on this adventure to learn how to cook an authentic 4 course Oaxacan meal. As a child of Mexican immigrants to the US, I was a bit skeptical about whether I would actually learn anything new--I learned SO MUCH!!! We learned about spices and chiles, herbs and oils, meats and maize. He gave us choices for each course of the meal and then doled out jobs for each of us. My daughter is an aspiring pastry chef and is learning about the Maillard reaction at school. Esteban went out of his way to explain how the Maillard reaction affected the flavors in the meal we were cooking. I also appreciated that even though Esteban is an experienced chef, he encouraged us not to follow the recipes too meticulously, suggesting instead that we taste what we made as we went along and making changes according to our taste preferences. When my daughter couldn't decide on a dessert, he helped her make two! This was such a fun, unique and delicious experience. I am looking forward to applying what I learned at home!

Fantastic! This experience exceeded our expectations and was way more personal than we thought it would be. My partner and I were the only ones in the class this day which was of course even more personal. Miguel was so easy to talk to and ask questions, and Estella was also so friendly despite a small language barrier. We will definitely be coming back and visiting. Thanks again Miguel & Estella !

Miguel’s location is spectacular, and he does wonders to bring you into his space and way of thinking. You’ll visit a local market (or a few) and then cook and eat throughout the course for the day. It’s a great time, and I would’ve entirely missed his instruction and insight had I simply tried cooking these dishes myself at home.

The experience was amazing. We started off learning a little on Miguel’s background. I was offered tea and coffee at the beginning. We then as a group decided on our dishes and headed to the market. It was wonderful to see the local market and all the lovely fresh ingredients. On a return we got to business making home made tacos and prepping our lunch. We then stopped to eat our brunch with two home made sauces we had whipped up. It was so delicious I can’t wait to try at home. After brunch we divided the tasks and continued to cook our dishes with expert instruction. The food we made was delicious we were given refreshments throughout the day. Miguel sent us the recipes straight away and was kind enough to help order a taxi to try airport for me. I would very much recommend this to anyone!
