What you'll do
You will learn how to make many types of homemade pasta in a real laboratory of pasta, reviewed among the "best 10 pastificio in Rome" . In a maximum 6 people class, we will start with handmade pasta, made with different kind of flours: like ancient grain Triticum Monococcum, Grano Saraceno (buckwheat) and wholemeal flour. We will do thin sheets dough, explanation of safe food cutting procedures, realization of three types of ravioli, tortellini, fettuccine with two tipical italian sauces. The experience includes a delicious tasting of homemade prosciutto hand cut.
We can also accomodate GLUTEN allergy guests for a very tasty fresh pasta and VEGAN guests for pasta without eggs.
We will cook all pasta and the sauces made during the class, eating our differents kind of pasta done, sipping good italian wine. An express tiramisu preparation will follow as a dessert. Moreover, to all the participants will be offered complimentary, the exclusive Professional Chef Hat with logo of "Pastificio Faini" and also the apron with logo. In additional to the regular program, everyday of the week a different version will be presented: Monday-Wednesday-Saturday Carbonara sauce; Tuesday-Friday Cacio e Pepe sauce; Thursday gnocchi!

Pastificio Faini is shop where we make and prepare pasta. Is located in the historic district of San Lorenzo in Rome, just 10 minutes walk from the metro station Vittorio Emanuele and liked by many bus like number 71 that run in the center. I will wait you in my laboratory.

We didn’t expect an authentic pasta making class. This was such a wonderful surprise the host is genuine and has a deep history with pasta making. We had a wonderful time and learned how to make pasta without a machine ! Also San Lorenzo is an interesting location to get out of the city and enjoy a different part of Rome. Honestly can not recommend this experience enough! Emanuele was great from start to finish, so attentitive even down to asking if the temperature was okay and if we wanted water. We learnt so much and had fun throughout. Feeling safe throughout COVID with hand sanitiser etc. Learning about the different grains and how to make professional pasta, skills we will take away and use throughout life. Will be suggesting this experience to friends and strangers alike, when in Rome make sure you come to Emanuele’s pasta lab!!

Fantastic experience where Emanuele really takes you through the steps like a pro showing you all of the different methodology and the original way of making pasta. This is a must do experience when in Rome if you want to learn about the authentic way of making pasta. His passion really shines through making it a fun and relaxing experience.
