This is really authentic wonderful cooking experience! As a Japanese guy, I've made Gyoza (dumpling) several times in my home. But I never made dumpling skin from the scratch. I felt I really making Gyoza and very satisfied. Of course Gyoza is really yummy, I think Tomoko's well-thought recipe is great.
