Tacos are a global fan favorite. It’s a dish that doesn’t just mean “Tuesdays” to me, and can be as versatile and multifaceted as the many #TacoTuesdays fans there are in the world.
We’re going to start off by getting to know each other. I inherently believe that who a person is, where they come from, and how they’ve evolved heavily influences their take on a taco.
Next, I’ll tell you about my taco strategy. We’re cooking vegetarian today, but if you have “beef” with cauliflower, we can work with it. Cauliflower is an incredibly versatile ingredient that can stand in for meat-based proteins in many ways, and satisfy the typical carnivorous palate when prepared well. Don’t discount it.
We’ll prep the taco ingredients together. The cauliflower mix will be finished similar to a chile relleno (Mexican stuffed peppers), and topped with a tomato-oregano sauce.
Lastly, we’ll take a bite of our resulting tacos together and jam on cooking, life, and quarantine.

The cauliflower tacos we learned to make were delicious! However, I wish the class had been labeled "not for beginners"... My partner and I could barely keep up with what was happening, and only had time to ask one question before the class ended and we were left with doing the entire second half of the recipe on our own. Neither of us cooks much, so if we had known the class would be going so fast, we would not have signed up. Otherwise, it was fun, and I would recommend it to someone who is a little more well-versed in the kitchen than we are! But maybe include difficulty level in the description 😊 and mention that the cauliflower needs to be diced beforehand. Thanks!
