What you'll do

Let's cook together! We will go through the whole process and will cook the best mole you will ever taste!

“Manchamanteles” Mole is a fruity mole sauce that originates from the Mexican state of Puebla. This versatile sauce can be served over pork loin, chicken, quesadillas, enchiladas or any dish of your choice. In our class, we will try adding mole to a Quesadilla, and then you can use the mole however you wish and have a creation of your own.

Mole can be a very complicated dish to prepare, and there are many ways to do it, but the Manchamantel Mole from Puebla can be the most desirable for this experience because it's an easy one to prepare, yet sophisticated enough to make it a great one. Perfect for lunch or dinner!

This will be an interactive experience where you will learn how to prepare the Mole, ask as many questions as you have, and interact with other people doing the same thing to see who can make the very best mole. This experience is great for groups and team-building.
Other things to note
*The spiciness of the sauce will vary depending on the peppers. Consider using 50 grams for a milder sauce and 100 grams for a medium to the spicy sauce.

**Prior to blending, soften the peppers by soaking them in water overnight or in hot water for 10-15 minutes. Drain and remove all stems & seeds

We are Mexican chefs and love what we do! We love cooking delicious meals from our family recipes. Inspired by our aunts, uncles and grandparents who were the best cooks we've ever met. We love playing around with their original recipes and finding new twists that incorporate vegetarian options or new flavors. One of the most exotic sauces in Mexican cuisine is mole, of which there are many different varieties. We are excited to meet you and host you on our authentic Mexican cooking experience!

We had a lot of fun making mole with Jacinto! His stories were entertaining and immersive – it was like "traveling" to Mexico with him and experiencing the culture for a moment. The mole we made was easy and fun to make, and our family loved it. I did this class with my younger brother – it's very family-friendly and a nice bonding experience too.

This was a fun class! I loved the stories that Jacinto shared with us! My friends and I had a great time learning to make our first mole together! I also enjoyed how we could add more or less of the ingredients depending on how hot, smokey or sweet we wanted the final dish to be. And, as Jacinto said “you have to cook mole with love!” and I think lots of people will enjoy and love this easy-to-make dish!

Jacinto's recipes and classes are excellent. He has great stories and is low-key. He seems at home cooking and talking about his family's recipes, he's also not bad to look at. Join his fun classes and savor the outcomes!
