What you'll do

HELLO, HOLIDAY GROUP GATHERINGS. Feel free to message me about private bookings. It's a great way to end up with a bunch of crusts with which to test every sweet potato pie recipe you've ever come across at once. Like, with a sports-style competitive bracket if you're truly serious. (For me that's just an average Thursday.)

Let's get back to it:

Together, we'll learn to make a butter-based pie crust both the hard way (pastry cutter) and the easy way (food processor!), all while I dispense the stories, tips, and tricks I've collected over the years while running a pie shop and editing a pie cookbook. You can follow along up to the stage of chilling the dough, and then I'll show you how to roll it out and crimp the edges while you're waiting on the refrigerator to do its thing. We'll be together about an hour and a half. Bring your note-taking materials if you want to be an overachiever!

"Oh my god, thank goodness I don't actually have to freeze and grate butter. This is so much better when someone can just SHOW you how to do it." —a coworker

Once you've got crust down, whatever kind of pie you make with it is up to you! Questions are welcome. If I can coach a group of groomsmen into making two dozen pies the morning of a wedding, I can teach you to make crust. Just... you know. Expect some practice!
Other things to note
No matter how ugly your pie crust is (and the first few might be pretty ugly), it's hard to make it taste anything but wonderful. It'll be fuuuuunn...

I'm a big fan of old-school apprenticeships, and that's how I learned to run a pie shop! I correct anyone who calls me a baker: I'm a piemaker, and that's all I want to be. My teacher Georgia Goggans ("The Pie Lady") and I just released a beautifully designed cookbook full of her recipes—because in my day job I'm a creative director and designer. It was a labor of love for me and four other designers who like to eat. Most anyone can make a pie filling, but the crust is another story, so THAT'S what I'm here to teach.

This was the second time I took Jo’s pie crust class, and it was wonderful! I have baking pies with mostly homemade crusts for more than 50 years, but sometimes they’re great and sometimes tough or lacking flavor. I already had Jo’s recipe, from the previous class, but I had chosen the food processor to make the crust the first time, and I over-crumbed the ingredients, which is easy to do with the food processor. This time I chose the pastry blender and the added time it takes. Jo is an amazing resource when it comes to pie making! She is also relaxed and patient. This is a great class! Highly recommended!

With Jo's fun and expert guidance, I created a pie crust from scratch for the first time. I need practice lol with rolling it out and crimping, but the taste and "rustic fallback" tips & tricks she shares are hilarious - and they work! Thank you for the wonderful online education! 🙏

We really enjoyed the pie crust workshop! It was super fun and really easy to follow along. Jo is an excellent instructor and knows everything about the pie crust making process. She provided insight on her personal experiences and was able to answer all our questions about making the crust. She even gave us some tips and tricks along the way for fixing mistakes, and helped us determine the best way to make an apple filling. At the end, we were confident we made a great dough–on our first try!
