What you'll do

You will be welcomed on arrival with small exotic Caribbean bites and a drink of your choice, just so you can get to know me better, and have a taste of what to expect in the course. After a quick tour of your surroundings I will give you an overview of the itinerary (length of time ... stops and starts ... so that you can feel comfortable about every step of the way). As you had already briefed me on your favourite fare I will treat you to a twist on that, accompanied by one of my mouth watering specialties like grilled jerk chicken or spicy curried lentils with creamed candied yams to toss in a bit of vegetarian. Then the session begins. Every experience includes something for everyone (meat lovers and vegans alike). A popular request is always my pimento pulled pork and potato patties, which I often substitute with homemade cilantro pasta to mix things up a bit. You will be encouraged to create a 'show-off batch' so your friends can see what you 'Made in Minutes'. No meal is ever complete without desert (savoury or sweet), so my signature Zabaglione with spongy Jamaican gingerbread can be had with a slice of cheese or fruit from my backyard. Music and stories about 'I remember when' removes any feeling that you are having a tutorial. Word to the witty - I pride myself on being an oddball musicologist so eclectic sounds will be on offer - you will travel the world in a day!

I've been hosting similar events for the past eight years in Spain, with great success. Before that I lived and worked on the American continent where I honed my skills. Although this is not what I do professionally I've been certified in the UK and continue to develop my craft with courses at every opportunity. As an avid traveller, and having worked in the arts for over 30 years exposed me to many different cultures and traditions which are also incorporated in my tutorials and creations. Being able to communicate in four languages is also somewhat of an added spice to the experience. Sine hosting is second nature to me, getting the opportunity to share my own traditions combined with those I've learned is just an amazing joy. Where you'll be

The experience starts with a pub hop at Moncho's (and by this I mean we meet at the only pub in town and hop from stool to stool) to work up an appetite. We will then walk up to the homestead to my country kitchen, during which you will be given a guide through the flora and fauna of the area. By this time you will be absolutely famished only to be satiated with your welcome pinchos and drink. Our location is a secluded hamlet worth a tour...

Things to know

Cancellation policy

Any experience can be canceled and fully refunded within 24 hours of purchase, or at least 7 days before the experience starts.

Government ID

You’ll need to take a picture of yourself that matches the photo on your ID. This is so Airbnb can confirm who’s actually going on the experience. You’ll only have to do this once.

Guest requirements

Up to 6 guests ages 18 and up can attend.

Alcohol

This experience includes alcohol. Only guests who meet the legal drinking age will be served alcoholic beverages.

More tips

This experience is tailored toward adults, however, I have done loads of sessions designed for kids 9 to 16. If there are guests who would like their young ones to have an enjoyable journey into cooking, I would be more than happy to organise a special day at the homestead for them.

What to bring

Wear comfortable shoes and our journey through our eatery begins with a meet-up at a pub and a 15 minute stroll to the hamlet where the courses are held. Also a bit of pocket change to buy pre or post experience drinks in town.

Bring carry-home containers so that you may show your friends and family what you created during your experience.
