What you'll do

When you arrive, we'll do introductions. Then you'll be served Umen noodles soup. Umen noodles are the local folk food of Shiroshi City, Miyagi Prefecture. What makes them unique is that the noodles are made without using oil. This makes them gentle on the stomach. The Umen you'll eat here are specially made by this restaurant, with a unique recipe that keeps the noodles from getting soggy. While you eat your noodles, the chef Kanno will explain about sushi and introduce some history about the origins of sushi. Once you finish eating, everyone will wash their hands and get ready to make sushi. Kanno will teach you how to make sushi, and then once you've made your set, he will make some sushi for you. Then you can eat and compare the taste of your own sushi with his sushi to see the difference!

I will be partnering with sushi and Japanese cuisine chef Kanno for this experience. I will be his assistant and translator. Kanno is currently the main chef at restaurant Yamabuki-Tei. He has 10 years of sushi experience and 5 years experience making traditional Japanese food. He studied sushi through the traditional style of intently watching his master and imitating him over and over while receiving corrections. Despite this harsh training, when you ask him about sushi, you can feel his passion and excitement. If you have any questions about sushi that you always wanted to ask a real chef, he'll be overjoyed to answer them. This passion also come out in the sushi itself: he carefully selects the rice, seaweed, and fish for the best flavor. You'll be able to tell when you eat it!

Where you'll be

"Umen" noodle restaurant Yamabuki-Tei, where you'll be learning how to make sushi, is a restaurant specializing in the local food, "umen" noodles. It was even chosen to be a tour stop for luxury trains. It has a private room where workshops can be held.
