What you'll do
Entering a beautiful Renaissance apartment in the very heart of Florence, you’ll be greeted with a glass of bubbly, get to know more about me, my cooking experience and a little history of the city itself. Once gathered, we will start preparing our fresh pasta, where I’ll explain the differences between how pasta is made, the various shapes and sauces and which sauces are paired with which types of pasta, and why. We’ll mix the ingredients by hand to create our pasta dough, stretching and then rolling it out; then leaving it to rest. Now to prepare the delicious tiramisù, one of the Italian classics made with mascarpone, coffee and a special type of biscuit plus a few more ingredients. As we leave it in the fridge, we turn our attention back to our pasta. We’ll make ravioli, with its stuffing, and tagliatelle among others. After making our sauces, we cook some of our fresh pasta, enjoying it with wine produced by ancient Florentine families. I’ll explain the history of these families and the wines we are drinking By now, our dessert will be ready to enjoy around the table. Coffee is available as is water throughout the experience. Finally, you head out onto the streets of Florence with new cooking skills and the recipes.

I started cooking at a very young age as my father worked away from home a lot and I was my Mum’s helper. Our holidays were often to Tuscany where we would have a house and a local cook to help us. I’d spend much of my time in the kitchen practising Italian, watching the cook and asking lots of questions. Today, my mushroom risotto owes its flavour to Maria from Montevarchi, Tuscany. I have attended many cooking classes. Cooking Italian food, in particular, fresh pasta is my passion, which I’ve made for decades & I’ve taught most of my friends to make pasta, risotto, panforte & panna cotta. I host dinner parties for 12 with ease. I live in Florence with a great insight into the city as I hold two MAs in History of Art & Renaissance Studies. I will offer fun, enjoyable cooking experiences for Airbnb guests.
