What you'll do
The wafting aroma of toasted spices and the colorful Nepali accents throughout Rachana’s apartment will immediately envelop you in a warmth that will only become more pronounced as you get to know her. Rachana is sweet and patient, but don’t let her quiet demeanor fool you--she’s funny and sassy and tells it like it is, making you a better cook in the process. Rachana will welcome you into her home with tea, cardamom lemonade, and a welcome lunch that may include Pani Roti (Roti Soup), Chura Ka Pulao (Beaten Rice), Aloo Sadeko (Sauteed Potato), and other dishes that blend Indian, Chinese, and Tibetan influences to make a cuisine all its own. During your workshop, Rachana will teach you how to make rahar dal (split yellow peas simmered with Indian bay leaves, cinnamon sticks, whole cloves, cardamom pods, and fresh ginger), basmati bhuja (aromatic, long-grain rice flavored with ghee), chamsur palungo (spinach stir-fried in mustard oil and spices), and sel (ground rice and sugar donuts cooked in ghee, a rare recipe from the royal court of Nepal). You’ll leave Rachana’s home inspired to share her stories and cook her food, which we’ll make easy with a packet of Rachana’s family recipes and a shopping guide to her favorite markets.

I'm Lisa, founder of the League of Kitchens, a unique culturally immersive culinary experience in NYC. Rachana, the host of our Nepali cooking workshops, was born in Kathmandu where her grandfather worked as an administrator for the king. Rachana grew up helping her mother cook for her six siblings and their extended family of 40. She loves to cook the recipes that have been passed down through her family over many generations, including secret recipes from the royal court. Rachana came to the US alone in 2006, and she is now happy to live in Flushing with her husband and two of her grown children. She loves to share her food and her Nepalese heritage and cooked the first ever Nepalese dinner at the James Beard House! She has also been featured in The NY Times, Nautilus, Pineapple Collaborative, and others.

Where you'll be
This workshop will take place in Rachana’s apartment in Flushing, Queens. Rachana’s bright home is a peaceful respite from the bustle of Flushing’s main street. After the workshop, make sure to wander around the Queens Botanical Garden, visit the Sri Maha Vallabha Ganapati Devasthanam (one of the first Hindu temples in the US), explore the incredible diversity of Chinese shops and markets, or catch a movie at the historic RKO Keith’s Theater.
