What you'll do

We will meet at my restaurant and have a quick chat with coffee and some delicacies, as we prepare to walk in one of the most traditional neighborhoods in Quito. We are going to buy the ingredients to cook a three courses Ecuadorian meal together. What I want to show you is all my local providers and how we work together to make creative ecuadorian menus in my restaurant.

Andrés

I'm chef and owner of the restaurant Shungo Solitario, located in La Tola, one of the oldest neighborhoods in Quito, with an excellent view of Old Town. As a chef I have 9 years of experience, I've worked in some of the best restaurants in Ecuador, Perú, Brasil and Belgium. In 2013 I worked in Astrid & Gaston in Lima, Peru, number 14 in the world and was named number 1 in Latin America by that year. In 2014 I got 4th place in the Ecuadorian Young Value contest. 2018 I was named culinary ambassador of Ecuador in Belgium, in a culinary and cultural exchange. This allowed me to have an experience in Hertog Jan, a three michelin starred restaurant, that was located in Zedelgem. This year I represented Ecuador in the worldwide culinary contest: San Pellegrino Young Chef, where I classified to the Latin America Regional Final in Peru.

Where you'll be

We will visit one of the oldest dairy shops in town, local providers of fruit and vegetables, a place where you can get fresh coconut water or juice and see the process of making coconut milk, and we will end our shopping in Mercado Central, one of the oldest and most traditional markets in Quito. Then we will cook together in my restaurant Shungo Solitario, enjoying one of the nicest views of Old Town
