What you'll do

It is a one day course on Chinese Tea Art aimed to provide a comprehensive introduction to people who want to learn about tea and Chinese tea culture. Much of the content is drawn from Chinese National Certificate Course for Tea Professionals hence represent a solid foundation for further studies and development. It is also a very practical course focusing on knowledge and techniques that can be applied in daily life. Course Specification: 1. Introduction to Chinese Tea - Basics of Tea Plant - Six broad categories of Chinese Tea and representative examples (brands) of each category - Storage and ageing of tea 2. Tea-ware and Tea Table - Evolution of tea drinking throughout history - Chinese Tea Art: History and Tradition - Contemporary Chinese Tea Art: teaware and tea table 3. Serving Quality Tea: Techniques - Elements of Consideration in Brewing and Serving Quality Tea (choice of water, temperature, teaware, time of infusion, etc) - Choice of tea-ware and different techniques for brewing different type of teas - Kong Fu Tea (Gaiwan), how to brew and serve tea in a sophisticated and professional method 4. Introduction to Chinese Tea Art - Deportment: dress, make-up, manner - Deportment: How to sit, stand, and walk - Rituals in Tea Art: how to greet guests, hold tea cups, serve tea. - How to arrange and decorate tea table

After many years of living in London, I find that there is no truly great teas offered here. Fine teas from its country of origin (China) shows great aromatic complexity, flavour depth, textural finesse and lingering finish. Certain types of teas such as Rock Tea from Wuyi Mountain have varietal expression, terroir difference and excellent ageing potential, just like fine wine from Europe. I have hosted many events to to show these interesting characteristics and sometimes compare to fine wine (I am also a fine wine professional). Everyone says this is something they've never experienced. I hold Advanced Certificate in Chinese Tea Art and also teach Chinese tea culture.
