What you'll do

Aloha and Welcome as we gather around the information table at Sharkey's 100-year old farmhouse in the historic plantation village of Papaikou. Sample our freshly brewed 100% Hawaiian coffee or cacao tea, grown right here on the farm. From there we begin an easy walk through our orchards where you'll learn about Hawaiian coffee growth and production. Interwoven behind the coffee are rows of cacao trees. Depending on the time of year, you can usually see tiny flowers and large, multi-colored pods hanging from trunks and branches. Long, heavy vanilla vines grow up the cacao trees, nature's perfect trellis! We'll show you how each vanilla orchid is delicately hand-pollinated to produce long "hands" of vanilla beans. We'll then proceed to the "Slab" where the pods are 'cracked' before the fermentation process. Next we move into the greenhouse where flats of newly planted seedlings just beginning their journey grow alongside large screens filled with coffee and cacao beans slowly drying to perfection. Finally we'll move into our certified Chocolate Kitchen where the Magic happens! Who wants a taste? Free samples!

Parents, please supervise young children at all times and be respectful of the areas marked Private. (Zen Treehouse Retreat is for registered guests only). There are no stairs to navigate and the restroom is equipped with handrails. We are a working farm and invite you to enjoy your surroundings!

Tom Sharkey is a retired Biology teacher and full-time farmer, chocolatier and tour business owner. Tom's been growing coffee, vanilla and cacao (chocolate) on the Big Island's Hamakua Coast for over 25 years. These favorite crops are relatively new to Hawaii and Tom's made it his mission to share his knowledge and experience with others interested in learning and cultivating pure Hawaiian-grown products. Shark's Tours specializes in localized agri-tourism, educates guests on plant propagation, fermentation, processing and production along with the art of bean-to-bar chocolate making in our certified farm kitchen.

This tour exceeded our expectations! Tom and Steve are warm, welcoming, and extremely knowledgeable about coffee/chocolate/vanilla farming in Hawaii! The extra touches that were provided made this tour one to remember. Would highly recommend if you are in the Hilo area!

We thoroughly enjoyed our visit with Tom, a.k.a. Shark. He is a great storyteller & an expert in everything cacao/vanilla/coffee & even history of the Big Island. For me the highlight of the experience was tasting of the cold cacao juice, for my husband- Tom’s chocolate, cookies AND making chocolate from scratch, i.e., from dry cacao beans. Even if you are not coffee/cacao/vanilla aficionado, come anyhow, just to have good time and meet new people. Five stars all around!

We loved this tour and learned a ton about coffee, vanilla and cacao. We have a lovely intro session and then toured the beautiful property and learned about each crop. Tasting cacao seeds and drinking their juice was fun!
