What you'll do

It's true that every detail counts in making the most delicious risotto, but it doesn't have to be difficult. While sipping on wine and munching on tasty snacks you will observe and learn the secrets, anecdotes and techniques to prepare this versatile dish, from scratch. You decide how hands-on or hands-off you want to be. Once you know these tricks, you will be able to make the risotto of your dreams in your home, adapting to seasonal ingredients, and easily impress your guests for years to come. Depending on the season, we will prepare a pumpkin, asparagus, or porcini mushroom risotto. All our ingredients are organically sourced and carefully selected. They range from Carnaroli rice from Piemonte, biological Tuscan olive oil and aged balsamic vinegar from Modena, Parmigiano Reggiano, as well as red and white wine from a premium artisanal vinery in the Chianti region and the best Roman coffee roast, Sant'Eustachio, made with our precious aged moka. The whole meal is vegetarian friendly too! We will all enjoy the delicious results of our lesson while overlooking the Roman skyline.

Gregorio

Being from Piemonte - the home of Risotto - and having lived abroad for many years, food has always been a way to remain connected to my origins. After living in London, Paris and Madrid, I finally moved back to Italy and dove head first into Italian cuisine. I took courses in Turin, Milan and Tuscany, from top chefs, health coaches and learned family secrets from my Italian grandmother.

Where you'll be

Renaissance Palazzo in the heart of Rome. My home - filled with contemporary art - is situated among the highest points in the historic center from which you can see the gorgeous skyline of the Vatican, Trastevere and beyond. Many Romans said it is the best view of Rome they have ever seen.
