What you'll do

We will welcome you at 9:00 am with coffee/tea and croissants samples. We then walk to a local neighbourhood market (which one depends on the day). We share a Parisian markets overview and history key points relating to Les Halles and Rungis in particular. We cover in quite more depth than most the history and geography of the 5 french cheese families along with getting you to taste our favorite cheese. We show you how to choose produce, and you can wander around the market and/or accompany the chef during the purchase of produce. We then head back to the school as it is time to cook! Back from the market at 10:30 am, we will prepare hands-on appetizer, main and dessert - for about 2&1/2 hours. This is obviously based on traditional French cuisine, with a focus on techniques rather than just recipes, so they can re-apply what they learn back home. We share tips and tricks and a bit of the science of cooking to explain the why of certain techniques during that part. We find this is the best way to help people transpose their experience to other situations. Around 1:30 pm, it is time to have lunch. We will serve you white and red wines, share stories using the dishes we have prepared to illustrate various aspects of French culture, and participants also have the opportunity to go back to the kitchen to plate the dishes throughout. It will finish around 3 pm.

Fred

We are a team of passionate cooks - Fred is the co-founder with his wife Amanda of Le Foodist, one of top English-speaking Cooking Shools in Paris. After 15 years of corporate work, he followed his passion for food, re-trained as a Chef and also got a Bachelor called High Studies of Taste. He has been teaching cooking since 2013 and loves to share stories of French Food and Culture. So does Frédéric who graduated over 10 years ago from the top French professional cooking school (Ferrandi) and has been front of back of restaurants, and consulting for top brands ever since - and has taught with us for 4 years. Sarah has had her own restaurants in France and Canada, and brings a communicative enthusiasm for all cooking. And Christophe joined us after cooking for about 20 years, many of which were spent in 1, 2 and 3 stars restaurants.

Where you'll be

We'll be at Le Foodist cooking school in a professional kitchen or one set-up for home cooking. There are both extremely charming in their own way - one of them is actually set in a cellar which is several centuries old. Depending on the day of the week we will visit one of two different open-air markets where Parisians go shop through the week. They are both located Paris oldest neighborhood, the Latin Quarter, which we will discover too.

Please makes sure you are comfortable walking and standing for a few hours to join this experience, as we will walk to and back from the market, and will be cooking in the kitchen after that. And come with an open mind, as we love to share about French culture and food - with surprises sometimes.
