What you'll do

You'll learn how to make high-class French pastry.

During the lesson, you'll be hands-on in the kitchen for about three hours. You'll start with the classic French "Pâte à Choux" (Choux pastry), learning both theory and practice.

After the lesson we'll move to my tea room to share our creations, enjoy excellent tea and good vibrations.

I came to Paris to study art but was drawn to the aesthetics and delicacy of French pastry instead. So I went to the Master program at the prestigious pastry school École LENÔTRE, specialized in desserts at the restaurant La Table de Joël Robuchon, and learned more about French confections as pastry chef at two other institutions.

In 2015, the Rue Française gallery invited me to open a pop-up tea room in its space. At the time, I had the habit of giving caramels to people who visited the gallery, earning me the nickname “Monsieur Caramel.” This also became the name of the boutique and tea room I opened in 2017, where I still love meeting people from all over the world and sharing my savoir-faire.

I would 100% do this again if given the chance. Yohan was a very kind and charismatic person and made the whole experience lovely. Not to mention, despite no experience in pastry making myself, my pastries turned out very well with his direction, and I have the recipe to try to recreate it back home. Though nothing will beat that rainy afternoon in the cozy kitchen with vintage music playing!

i had the most amazing time learning to bake these pâte à choux! Yohan is incredibly charming and knowledgeable of his craft. my wife and friend came by after to pick me up and Yohan was kind enough to let them inside his cafe for tea and treats! I recommend this activity if you want hands on fun baking with a great host! the 18th arrondissement is also a great area with lots of cafes and market to enjoy!

파리에서 프렌치 제과를...기대만큼 즐거운 시간이었습니다. 집에서도 꼭 다시 도전해볼거에요.. 늘 관심 있어 하고 체험 해 보고 싶었던 클라스여서 아이들에겐 행복한 체험이었습니다 .. 지금 와인 한잔 하면서 안주로 ~~ㅋㅋ 건승하세요^^

Merci beaucoup to Yohan! I was looking to bake something different in Paris and this was it. Location in Montmartre with many cafes, Boulangerie, qnd fruit stands were great! It was a hidden gem, perfect and convenient for quick access to transportations, surrounded by absolute artsy sceneries. Class was conducted in English, French, and Korean languages. You will get detailed step by step instructions regarding how to do: mix, whip, fold, stir, bake, sift, etc. Recipe included. Texture of dough was perfect. Squeezing the custard filling was great! We added a cap of alcohol to the final production. Crumbled, with fillings, or no fillings. It was simple! I have known artsy people and passionate chefs. Yohan was certainly passionate. The place or setting was like a warm and casual home for entertaining small parties. Music was fantastic as we enjoyed tea time together. ! I like the old black & white photos as decorations for the cafe. Nice presentation. Many thanks! Have fun, everyone! It’s a natural home style kitchen behind the cafe. Enjoy sipping q cup of hot tea and other sweet pastries! Lemon tart shared with students at the closing was a bonus. Highly recommended experience! Yummy.
