Poland is famous for its fermentation. We have been fermenting food here for centuries and, unlike in many other countries, the skills involved are still widely understood and used in homes around the country. Fermentation is a wonderful and simple method of preserving seasonal produce that creates a whole range of tasty and super-healthy foods that should be part of every home kitchen, so please come and join me at my home when I will enjoy sharing the secrets of successful fermentation with you!
The fermentation class is suitable both for beginners and those who want to learn about fermentation in more detail. Our class will include an introduction to the magical world of fermentation, with an outline about famous fermented favorites such as kimchi, sauerkraut, and brine fermented vegetables. Fermentation (kiszonki in Polish) is “the chemical breakdown of a substance by bacteria, yeasts, or other microorganisms, typically involving effervescence and the giving off of heat”. Ironically, it’s the degeneration of the raw product that takes it from something normal to something rather spectacular. Penicillin, the first-ever antibiotic and one of the most commonly used medical products on the market today, owes its origin to accidental fermentation.
During the classes at my home, we will learn in a practical and hands-on way how to make famous Polish sauerkraut (pickled cabbage)
