What you'll do
Upon arrival at my family home you'll be greeted in true Moroccan style and offered dates and mint tea. There will be time to get to know a little about me, chef Fatim-Zahra, and my 30 years of experience of cooking delicious Moroccan dishes, before we head into our kitchen. In our small group of home cooks I will guide you and help you learn to cook a variety of tasty Moroccan recipes. It will be a highly personalised, interactive and fun cooking experience. Our experience will be conducted in English-language and includes preparation of at least two mouth-watering Moroccan specialities such as briouat, pastilla and a spicy cooked salad plus a fish, chicken, beef or lamb tagine. If you join me on our holy day of Friday, we will prepare Royal couscous – the traditional day for eating couscous in Morocco. During our time together we will be assisted by a ‘Dada’ and all participants will try their hand at making dough and baking bread the traditional way!

I'm the head chef and co-founder of Marrakech Cooking School. I've been cooking Moroccan food for over 30 years, since I was a young girl brought up in a large family in Fez. Like many Moroccan girls I learned how to cook Moroccan food from my grandmother, aunties and my mother. Real home-cooking recipes with a northern Moroccan influence. It is largely the recipes from my childhood that influence the dishes we prepare today and share with our guests in the cooking school. From family cooking in the home I developed a passion for food and over the years I have honed my skills working as a chef in several Marrakech restaurants. I was professionally trained by one of Morocco's well-known master-chefs. Nowadays I prefer to focus on teaching and training at our Marrakech cooking school.

Where you'll be
We will pick you up from our medina meeting point at Riad Africa (or from your Marrakech accommodation) and drive you out of the city on the road which leads to Lalla Takerkoust to our rural residence near Tamesloht. We'll be cooking in our home, in our onsite cooking school which is located outdoors in a covered patio area near our pool. Days are usually sunny in Marrakech but we can always move indoors if the weather isn't great!
