I will show you how to make one of the following regional Italian pasta dishes: -Pasta All'Matriciana (Lazio region) This dish is very popular in Rome and incorporates San Marzano tomatoes with pancetta, chili flakes, red onion and Pecorino Romano. -Pasta alla Carbonara (Lazio region) The very popular and iconic dish of egg, guanciale, Parmigiano Reggiano, Pecorino Romano and pasta cooking water. I will show you how to prepare this dish in an authentic manner (no cream!) and teach you the techniques to prepare it with confidence. -Pasta alla Puttanesca (Campania region) Learn how to make this very spicy and also sweet and savory dish of San Marzano tomatoes, anchovy, pine nuts, currants, capers, chili flakes and white wine. -Pasta cacio e pepe (Lazio region) This is one of the most simple pasta dishes in all of Italy and yet it is also one of the most difficult to construct properly. I will show you the techniques for bringing this together in a flawless manner. -James' Comfort Pasta (San Francisco, based on a dish from Lazio) I created this dish as an answer to a cold and foggy San Francisco night. It is inspired by the famous pasta sauce made with vodka, tomato and cream. It's incredibly simple and yet evokes praise and admiration from all. I will also explain the history behind whichever of these dishes you choose for your experience.

I earned a masters in Spanish literature and linguistics through Middlebury College and lived in Spain for two years. I later entered into the technology business and worked at various advertising agencies in San Francisco over a 12 year period. Along the way I started cooking as "therapy" for my corporate day job. CookWithJames was created 15 years ago as an underground supper club. I would prepare multiple course regional Italian and Spanish dinners in my home for guests and friends. I staged at Quince restaurant after they opened in 2004, and has also lived and cooked in both Italy and Spain. After leaving my day job in advertising in 2009, I launched CookWithJames as a full-time business, offering private sit-down dinners as well as cooking class parties for all occasions.
Guests will be served appetizers upon arrival and while we prepare out meal together.
Where you'll be
The cooking class and experience take place in my Ashbury Heights period home. I have a beautiful Edwardian space with tall ceilings, hardwood floors and a well-appointed and cheerful kitchen.
