About your host

Hi! I'm Eleonora, a forager and a chef. I've also written a book about foraging, "La Cuoca Selvatica" (Bompiani) and opened the first and only restaurant in Italy to offer 360° plant-based wild food. I currently forage all over Europe to offer the best wild plants and I teach foraging and cooking with wild herbs, barks, seaweeds, roots, etc. both in Italian and English. French and Spanish upon…

What we’ll do

A foraging course is the first step to understand wild plants, how to recognize them properly - making attention to toxic twins, for example - and also how to use them, especially if you're going to transform them in your kitchen! You will learn to look to a habitat, to identify properly plants in every period of the year, to use parts of them which are edible and to create amazing recipes! Every…

What else you should know

First foraging experience? No worries, everything will be smooth and clear. Passion for botany and Latin? We're here! Lovers of wild food cuisine? We can help! Babies? Sorry, better children 10 yrs and more, so that they can understand and happily enjoy the training. A chef? Just write me!

What I’ll provide

Snacks and Tasting menu
I will surely bring some wild plant-based snacks to eat along the way. If you wish to have a tasting menu after the course, you can book it directly at the restaurant where the professional kitchen is.
Creative supplies
Basket, cotton and paper bags, foraging knives; block-notes and pen; items to collect plants and create a herbarium. In case you choose to cook after the foraging course, I will also supply glass jars and boxes and everything you need to transport them (some restrictive laws may apply).

What to bring

block-notes and pen; basket and cotton bags; knife and scissors; hiking shoes; k-way

Where you'll be

We will choose the habitat you wish to know better and forage there. Most of basic training happens in the countryside, so open fields, but we are just near the mountains, so you will also learn to identify some species growing in the forest or in a habitat near lakes and rivers. If you choose a training which implies cooking, we will use a professional kitchen in a restaurant in the area.
