What you'll do

The preparing and baking of naturally-leavened bread is usually done over the course of a couple days, so this workshop gives you hands-on experience with the steps, without waiting the full time for each.

We start with an overview on the local natural ingredients and some fun facts about the "whys" of the bread.

Next you get to feed your very own starter, give it a name, and learn how to take care of your new baby.

Then we'll cover the leaven.

While doing this we'll toss some ready to bake dough into the oven.

Then on to the dough and the folding. You'll do this for a couple rounds in class, and then can take home and finish and bake according to your schedule.

We'll of course sample the bread and discuss great custom loaves. Past students may show up and share some of their recent creations.

You'll have instructions throughout that you can take home.

Hi, I'm Jordan.

I dove deep into learning the classic method of making bread with just flour, water, and a little salt. I wanted to get the great flavour, fantastic nutrition, and incredible versatility that homemade bread brings, so I began my journey. After loads of videos, reading and re-reading books, bread class, and weeks of caring for my homegrown starter, I baked my first bread. From there I baked every weekend, and began sharing the bread and the method I'd customized for me. The reaction was unlike anything I'd experienced with a creative venture. Hence I'm sharing that method in the format I wish I had available to me when I learned: a hands-on workshop.

Every home should have fresh-baked bread. It isn't that hard - humans have been doing it from the dawn of time.

Where you'll be

The class is taught in the instructor's home in Suncrest in Draper, Utah, at the South end of the Salt Lake Valley. It has a roomy modern kitchen, with immaculate views of the Wasatch Mountain Range. All ingredients are from within an hour or two of Draper.

We are on the road and this was the highlight of our stay in greater salt lake area. I never baked bread before and I still got a lot of value out of this experience. This class is very well organized to make you experience every step of the sourdough baking process. We baked our first loaf of sourdough right after this class! This class was done in a safe way with everyone wearing masks. Even if you don't want to bake, you can frankly attend this class to talk about cooking/baking. Jordan has good recommendations for books/podcasts on the subject.

You'll learn the art of sourdough from a "scientist-artist" who has a passion for shared economies--bartering, couch-surfing, storytelling, and of course, swapping fresh-baked sourdough bread with anyone who has a thirst for adventure, food, and flavor. Jordan uses a whiteboard and his own collection of quirky icons to create a running infographic to help you visualize the system for how great sourdough bread is made. Simultaneously, he guides you through every step of the process from how and why to grind your own fresh whole wheat flour right up to the best tools for scoring bread right before it's baked. You'll get your hands dirty, you'll enjoy sunshine pouring through his floor-to-ceiling windows, and you'll feel his passion as you listen to him share the journey of how and why sourdough bread is one of civilization's most enduring artisan experiences. You'll craft your very own sourdough loaf to take home to bake, but Jordan stays up late the night before your class to make sure there's going to be a loaf ready to come out of the oven that you can enjoy together with your classmates. He might even rummage around and find some fresh french butter, some balsamic vinegar and oil, or apricot jam and gouda to go with your piping hot bread. This experience was a surprise birthday present for my wife. We both love rustic (artisan) sourdough bread. Jordan did a great job explaining the principles behind creating natural leavening, the best source for non-GMO ingredients, and how timing the leavening process can be used to create various versions (sweet to sour) of a sourdough "country loaf". His instruction included explanations, visual aids, and hands-on, step-by-step dough creation. Jordan was well prepared. In addition to stepping us through the process of creating sourdough starter, dough leavening, and our own bread loaf dough, he had pre-made loaves ready to demonstrate the scoring and baking process. We walked away with a new appreciation for making bread the natural way with healthy ingredients, not to mention our own sourdough bread "boules" out of which we baked 4 artisan loafs. Jordan provides a great, personal experience that we highly recommend to anyone interested in learning healthy bread making using natural ingredients.

Super fun activity to do with multi-gen family. We spent a snowy afternoon making dough to bring home and baking loaves to sample there. Jordan's excitement about sourdough bread was obvious, and the view from his place is gorgeous.

Jordan was awesome! He is very knowledgable and has a very well thought out and prepared experience that gave us the most hands-on possible! e had a tremendous experience. My husband and I went together, and we learned a great way to make sourdough bread, much better than you could ever do from trying to learn it from a book. We learned about why to go for some good fresh flour, a good brand of salt that has trace minerals that we need, and we got to try out every phase of the sourdough process. Hands on is the best way to learn. It was quite enjoyable 2 see how easy it is and what great results you get. And we came out of it with dough to bake a loaf plus some freshly baked bread to eat, and starter for future loaves. If I never wanted to do sourdough myself, I'd still recommend this just to learn about good food.
