What you'll do
The day starts at 9am when we gather at our lovely terrace in Restaurant El Huacatay. From there we start a short walk to Urubamba Local Market (5 blocks walk) where the guests will receive a tour and learn about local products and how they are used in our cousine. Once this activity is finished (around an hour) we head back to the restaurant terrace where everything is already setup in order for the guests to prepare, with the help and guidance chef Pio, 3 different dishes. The entrance will be a "Causa" (mashed Yellow Potatoes with Shrimp and Avocado) the main course will be a "Saltado Mixto" (stir fried Mixed Meats, Creole Style) and Quinoa Mousse as a dessert. Vegetarian and vegan options also available.

Im Pio, chef & owner of "El Huacatay" restaurant and have been living and cooking in the beautiful Sacred Valley of the Incas in Cusco since 2004. I was born in Perú and after ten years working in different peruvian restaurants in Lima, I worked for 10 more years in other countries to come back to Cusco and open El Huacatay Restaurant together with my wife Iris in Urubamba. I´m a great believer in the importance of Slow Food, we use local and sustainable products in the elaboration of our dishes and share this information with the final consumer.

Where you'll be
The local markets are one of the most important places to visit in Cusco an we will let the visitors know this place from the point of view of the Chef. In this markets you can find a huge variety of local products. The visitor will be amazed by all the colors, smells, textures and taste of the unique local products.
