Vous participerez en saison ( décembre à mi-février) au cavage des truffes avec nos deux cockers espiègles , Truffette et Rafinette ou à la recherche de la Truffe à la mouche. La visite se termine par une dégustation de toasts truffés accompagnés d'un verre de vin de la région . Black Truffle Hunting in Périgord
We will go hunting in our park and you will learn how to hunt truffles with "flies". This old method is a unique experience and ask a special attention, a good nose and has only one rule: the nature respect. That's why before the hunt, we will take time to explain to you how to profit a maximum of your experience. During the hunt, I will explain all the truffle secrets. You will learn how to recognise a good and a bad truffle, if it is enough mature or not and how to harvest them without damage. I will teach you how to clean and cook the truffles. Discovering a vineyard in Saint Emilion
At Château Haute-Nauve, we offer a visit from the foot of the vine to the bottle by a member of the family, Marie-Anne or Florent ( Mother and Son ) We will start by offering you a tour of the vineyard. Initially, we will explain the history of our family estate for 4 generations, the history of the name Saint Emilion, its specificities, its various varietals. We will show you one of our parcels of Cabernet Franc, planted in 1988 and then at the same time, a plot of Cabernet Franc which is much older. We will explain the differences between a young vine and an elderly vine. We will end the vineyard tour, showing you a UNIQUE device in the area. A windmill with a large bottle of wine 6 meters high. This big bottle actually hides a boiler. During the spring jellies from March to the Mi-Mai, our bourgeons can unfortunately freeze. If the vine is affected, we may lose some or all of the future harvest. We will then go to the winery, we will explain the whole production process to you ( fermentation, climbing, cleaning etc... ). The visit will end in our barrel cellar, or we will explain our entry methods to you. You will have the opportunity to taste 3 wines from the estate. Possible tours in English
All seasons Wreath Making fun laughter and great lunch
A Seasonal wreath making workshop We start by taking to the outdoors for a fun bit of foraging. Amongst our acres of woods we will forage for flora and fauna to build our wreath. Returning to the dining barn we will spread out and get creative resulting in a beautiful seasonal wreath which you can take home to hang and admire . Whether it be spring autumn or a festive Christmas wreath they add natural all year round interest to your home. The wreath frame is made from willow and moss beautifully natural, will age beautifully and can last for years. Half way through the day we will break for a delicious homemade three course lunch dietary requirements can be catered for. Lunch refreshments and all the materials you will need to make your beautiful wreath are included so come and have some fun!
Animal Tracking - Périgord
By roaming together into the woods and awakening your senses, you will learn how to find and identify wild Animal signs. The best way to peek into their secret lives in France's most wooded region ! Learning the Art of Tracking will reconnect you to Nature, resurrect a prehistoric way of life and make the world sparkle around you. We change sites to reduce our impact on Nature and keep wildlife tracks around. Exact rendez-vous spot confirmed by message a few days before the workshop. The know-how I will be transmitting is the fruit of a long work. Thank you for respecting it and not make any commercial use out of it.
Village of St Emilion and its Grands Crus
I suggest you spend an afternoon together, for 3 hours: We will first get to know each other over a drink, in my central apartment in Libourne, located in a typical street in the region. We will then visit a wine estate in Saint-Emilion (visit followed by a tasting of 3 red wines). Finally we will stroll through this magnificent and typical village of St Emilion, listed as a UNESCO World Heritage Site. Possibility to visit the Monolithic Church, the largest underground church in Europe (not included).

Olivier vous accueille avec passion dans son atelier, une grange de près de 100 m² datant du16ᵉe siècle ! D'abord, vous irez avec lui en forêt pour plonger dans le vif du sujet. Il vous présentera une introduction sur les arbres et ce sera l'occasion pour vous de vous reconnecter avec la nature dans une vieille forêt du Périgord. Il vous transmettra ses connaissances sur l'intelligence des arbres et vous ferez connaissance avec cette matière première, dont vous vous servirez pour la conception de votre oeuvre. De retour à l'atelier, vous passerez à la création de votre tabouret. Durant cet atelier, Olivier vous enseignera des techniques de fabrication traditionnelles grâce aux vieux outils du passé. Vous utiliserez un bois massif, local, pour créer votre œuvre. Et surtout, vous n'utiliserez pas de produits chimiques et inscrirez vos créations dans une démarche respectueuse de l'environnement (wood upcycling, mobilier nature, tenon cutter). Vous fabriquerez d'abord des pieds en châtaignier. Vous choisirez vos branches, les écorcerez au banc d'âne, couperez et assemblerez les différentes pièces. Enfin, vous créerez l'assise sur la planche naturelle : vous écorcerez, dégauchisserez et poncerez votre création avant de venir y apporter les finitions naturelles. Vous repartirez de cet atelier avec votre création unique et des connaissances en ébénisterie.

Cook and dine at a Michelin starred chef
After your arrival around 14 hours, we will meet over a coffee, discovering the basket of local and seasonal products. The chef will suggest the evening meal menu and begin his cooking demonstration, with your help, while answering the different questions on the preparations and tips used. Once all the dishes have been prepared for dinner, we will sit down together, around our family table, to enjoy and continue to exchange on products and culinary art. INITIATION - THE SECRETS OF COGNAC. Between authenticity and modernity, guided by a member of the BOURGOIN family, discover all the stages in the production of cognac: from the vine to bottling. This activity allows you to discover the history, the know-how and the secrets of the Bourgoin family to the rhythm of a life-size, modern and refined scenography. You will have the opportunity to visit our farm, our authentic aging cellar still in operation and of course our distillery where you will be exposed to the history of cognac. The viti-vinicultural approach will be tackled by a member of the BOURGOIN family. You will discover there the great and the small history of cognac at the work of the historical and geopolitical mesh of the region. The high point of this journey is the tasting which allows you to grasp the nuances of COGNAC, EAU -DE-VIE, PINEAU, VERJUS and SUCRES DE RAISIN which have made the reputation of the house on the most beautiful starred tables in France.
From the ground to the glass
From the vineyard to the tasting, I propose to immerse you in my life of winegrower by following the different stages of the production until the tasting: - Discovery of the vineyard: let yourself be guided to my vines to show you how I grow it and I respect it to produce the grapes. I will explain to you what my environmental steps are. - Discovery of my cellar (place where the wine is vinified and raised): enter where the wine is made and we will explain the stages of winemaking and aging - Initiation to oenology: Awaken your senses through an introduction to tasting where you discover my small range of wine but endowed with great wealth. You will taste my 4 vintages by describing your sensations and matching each wine with chocolate. This initiation will take place in our tasting room where local artists are exhibited.
Guided Tour & Tasting in French
During this experience, we will show you 2 wine properties to discover in one visit . First, you will discover Château Tour Baladoz, a traditional vineyard with an authentic cellar and typical Saint Emilion architecture, which produces a traditional style of wine of the region. The second avant-garde vineyard, Château La Croizille, has a state-of-the-art modern winery. We'll walk you through how winemakers use cutting-edge technology and winemakers to complete the winemaking process and produce a new and different wine. We will also explain the wine process from the vines, grape varieties, maturing, etc. The visit will be followed by the tasting of 3 wines from the name Saint Emilion Grand Cru, from the various estates with an introduction to tasting techniques.

During a privileged moment, I will explain the vines, the very delicate distillation on a wood fire, the secrets of aging in our cellars. I will talk to you about terroir, patience, common sense ... I will tell you the history of cognac and our atypical personal history. Finally, you will put all your senses into action during a workshop which will allow you to discover the aromas of our brandies and to combine them with chocolates selected from a craftsman in our region. Come and share our passion for cognac, an alliance between very old know-how and contemporary techniques. Come and live a true and authentic experience. Gourmet trekking on the way to the night and stars
LANIAKEA Embarquez pour une soirée complète à la découverte de la nuit et des étoiles dans le célèbre Triangle Noir des Causses du Quercy, au cœur du Parc Naturel Régional du même nom. Selon la saison, nous nous retrouvons pour une petite randonnée de jour de 2 km vers notre lieu d'observation , un pech (sommet de la colline) exceptionnellement ouvert sur un panorama à 360°, exempt de pollution lumineuse. Ici nous attend un pique-nique campagnard composé des meilleurs produits locaux (charcuterie, melon, fromage, dessert, pain campagnard, bières locales, vins locaux, ...) spécialement sélectionné par mes soins ainsi que des plaids et des couvertures pour s'installer dans l'herbe du causse et profité du ciel étoilé qui commence à se dessiner partout autour de nous. Une fois le noir installé, je vous propose une lecture du ciel à la fois poétique, mythologique, rêveuse et scientifique qui vous embarquera aux confins du cosmos, dans les vertigineuses distances de Laniakea, le super-amas dans lequel nous habitons. Le télescope 200 mm nous permettra ensuite de plonger dans l'univers profond à la recherche de quelques galaxies voisines, nébuleuses, amas et planètes de notre système solaire. Et lorsqu'il sera temps de reposer les pieds sur terre, une randonnée nocturne de retour nous plongera dans le monde de la nuit avant de rejoindre nos voitures et de nous quitter.
Vineyard Tour & Tasting
Guests are introduced to the art of wine making while touring the grounds and cellars of a working vineyard culminating with a wine tasting. You are met by one of by one of the vineyard owners who will introduce you to the art of artisan wine making in the beautiful Bordeaux countryside. After enjoying the grounds and learning about the growing of grapes from from new plant to harvest we move into the cellar where you will see how we turn the fruit into rich red Bordeaux wine culminating with a visit to our tasting room for a sample of this world famous wine. The tour and tasting takes about 1 1/2 to 2 hours during which time you will gain an insight into the making of fine wine from enthusiastic English wine makers that made their home in France. You can tell their wine is made from the heart and their explanation of how it is produced is explained simply and fully. You will find this new found knowledge has a way of being infectious and makes the enjoyment of drinking wine even better. Tours can be booked for 10:00, 14:00 or 16:00 subject to availability.
