We meet at Reims center station. I hold you with my air conditioned vehicle. We will drive to our vines in Villedommange, a village classified in premier cru in la Montagne de Reims. After a drive through the vines, we will stop at Mont Saint Lié, one of the most amazing view in Champagne vineyard. I will present you the AOC Champagne and explain you the wine growing and more particularly our sustainable approach. You will also try the pruning, the tying step and pruning tools depending on the season. Next let's go to our cooperative of Villedommange, to understand what are the steps of our cuvées elaboration, from the platform to the cellars in which millions of bottles are ageing : Champagne will no longer be a mystery to you. After all, let’s go to our wonderful typical champagne cellar, 200 YO, where we will introduce you to the subtlety of complex aromas champagne vines offer, by tasting three of our cuvées with local food. Then you will discover the Ratafia de Champagne. We will end the visit by a unique eating and drinking experience : 3 cuvées with local « amuse bouche ». I will welcome you on the estate then you will present the Champagne as a whole. In a second time, we go in the vineyards to present you different grape varieties, as well as work in progress. Then we walk in the village on foot to join our traditional press. I you explained his cycle of harvest, winemaking and champagne. You will witness the disgorging on the fly (ancestral method), practice the labelling, then we will go to our cellar to taste 3 vintages of your choice.
Workshop How to taste champagne
I propose a Tasting Workshop that takes place in 2 stages. The first part is devoted to the presentation of Champagne and its terroirs (Montagne de Reims, Marne Valley, Côte des Blancs ...), and the art of making champagne. Then, in a second time, you will taste 3 very different champagnes in order to understand the nuances of the Champagne terroir. It could be 100% Chardonnay champagne, 100% Pinot Noir champagne and 100% Pinot Meunier champagne. You will leave by having understood what differentiates champagne from other sparkling wines, but also by having learned to taste it. What is the good champagne glass? At what temperature should it be served? What is a Blanc de Blancs champagne? How to give champagne with a dish. Other things to note This workshop is for everyone, neophytes as amateurs. It is offered in French and English.
Blind tasting
I propose a guided tour of the facilities with press, winery and cellar, during which I will explain the vinification of champagne. You will follow the path of grapes, from the press to the bottle. You can test your knowledge with a game that will ask you to awaken your touch, then I will offer a blind tasting of 3 vintages. Will you know how to recognize them? Le Discovery Bay vous entrainera dans un voyage hors du temps dans nos vignes de la Vallée de la Marne. Installez vous confortablement à bord de la camionnette et laissez vous guider par Eric pour découvrir son histoire, son vignoble et son champagne de caractère. Le viticulteur chauffeur vous guidera sur la route du champagne jusqu'au premier spot qu'il a choisi : le bord de la rivière Marne, la plus grande de France avec vue sur l'un de ses méandre. Le calme de l'eau vous bercera pour la première dégustation de sa cuvée Adret Extra Brut, fruitée et surprenante en fin de bouche. C'est toujours à bord du combi pourvu de banquettes confortables et de grandes surfaces vitrées, que vous reprendrez la route du vignoble en direction de la rive gauche. En plein coteau cette fois, au lieu dit "Beauregard" offrant une vue à 180°, vous découvrirez l'étonnante loge de vigneron réinstaurée pour cette expérience unique. C'est dans ce lieu magique que vous découvrirez la typicité du terroir avec la dégustation de l'Ubac Brut, champagne structuré à la fraîcheur remarquable. Bike ride forest of fontainebleau
Fontainebleau is 65 km south east of Paris. It is 45 minutes by train from Gare de Lyon in Paris. Along our 29 kilometers bike tour, we will discover some fascinating places of the forest on bikes that I carefully maintain. We will have several breaks and I will give you many explanations about the forest. Get ready to an uphill slope to take advantage of a panoramic view over Fontainebleau, I will tell you the history of the castle which can be seen in a distance. Then we will ride our bike on a nice flat and quiet forest car-free road, but also on some path, which will allow us to join the most beautiful aspects of the itinerary like for example some well-known places to rock climber. We will see several panoramic views and also the charming little village of Barbizon where several famous painters lived in the 19th century. A nice route to explore various areas of the forest of Fontainebleau on some little used paths. Other things to note The route is easy for those who know they can ride 29 Kilometers. Discover the forest of Fontainebleau
Some safety guidelines and leave for a 10 km route to discover some fascinating places in the forest on bikes that I maintain with care. We will take several breaks during our journey and I will give you plenty of explanations about the Fontainebleau forest. It all starts with a climb that you can walk to the "Croix du Calvaire" in order to enjoy a panoramic view of the city, I will tell you about the history of the castle that can be seen in the distance. Then we will take a beautiful flat forest road, quiet and forbidden to cars. We will also reach a few paths as well as small trails that we will walk next to the bike and that will allow us to reach the most beautiful assets of this itinerary, such as the discovery of rocky chaos. This varied route allows you to discover beautiful places in the forest, on trails that are not very busy, while staying close to Fontainebleau. Ability to adjust schedules upon request. Take a seat and enjoy your tasting class with a champagne quiz then train your nose to identify the different aromas and flavors that can be found in champagne through an olfactory workshop. Get competitive as you get to identify blindly 3 different champagnes from small wineries all while eating some local snacks. Immerse yourself into the French lifestyle with a casual lunch which consists of homemade regional specialties like pâté croute, Langres, or pink biscuit cake paired with a variety of champagnes. Eco-ballad & open tasting
What we love, we share. With this in mind and aboard my small electric car, I will be your guide and your private driver. Together, we will leave for a period of 2 hours to explore the historic vineyard of Aÿ-Champagne classified as a UNESCO World Heritage Site. You will immerse yourself in my profession as a winegrower for a peaceful and romantic stroll. Then, I will make you discover my champagnes in the heart of the vineyards. It is therefore surrounded by nature and facing unforgettable landscapes, that the moment of a tasting time stops, giving way to the effervescence of Champagne emotions. Prepare to share my bubble in the open air and remember to take a cap, hat, scarf, jacket and good humor (depending on the weather conditions) the day of our adventure. I will welcome you at 2:00 p.m. in front of the Reims Center train station tourist office. Start your sparkling day, immerse yourself in the history of your favorite Champagne houses. Let the historical village of Hautvillers and its famous church get you back in time. Take a few minutes to thank the Monk Dom Pérignon for his discovery and admire the breathtaking view of the UNESCO-listed vineyards. Travel through the southern vineyards of the elegant Montagne de Reims as your guide shows you the secrets of the region: Why are our vines planted on hillsides? Why is the soil made from such pure chalk? How can Pinot Noir make a white wine? Discover the cellar of a family-run winery. Visit the traditional press and the winery, where your host will make you discover the traditional "Champagne method", Appreciate several tastings of their own production and acquire tasting knowledge and expertise with these rare champagnes! Finish your afternoon with another 3 glasses of Champagne in a small family winery where you will be able to taste and compare various “cuvées”!
